A unique new version of bubble tea has emerged and taken the market by storm – sticky rice bubble tea. Many cafes and beverage shops in Hai Duong have quickly embraced this trend.

Bubble tea is a familiar and popular drink among young people. This beverage is creatively prepared in many attractive versions such as roasted bubble tea, chocolate bubble tea, matcha bubble tea, etc. Earlier this year, sticky rice bubble tea created a sensation on social media because of its unique yet familiar combination.

Sticky rice flakes (Cốm dẻo) are a familiar dish and a specialty of Vietnamese rural areas, made from young glutinous rice. These fragrant, sticky rice flakes are meticulously made through many steps to create a product with a distinctive aroma, embodying the essence of nature, sunshine, and wind.

Few would have thought that sticky rice flakes could be combined with milk tea to create a unique drink. But with creativity, milk tea has been combined with sticky rice flakes to become a sophisticated beverage that blends the traditional charm of sticky rice flakes with the modernity of milk tea. Sticky rice flakes not only offer a delicious flavor but also evoke memories of traditional culture. This attracts both customers who appreciate traditional flavors and dynamic young people. The combination of various teas and accompanying toppings creates diversity and appeal.

This unique combination of modern drinks and traditional food not only offers a fresh and appealing flavor to young people but also creates a widespread culinary trend.

Many cafes and bubble tea shops in Hai Duong have quickly grasped the trend, promptly adding this drink to their menus to serve customers.

Ms. Tran Thi Huong, owner of Coffee 34 in Kinh Mon town, said that on average, the shop sells about 100 cups of sticky rice milk tea per day, and the number can be higher on weekends and holidays. According to Ms. Huong, making this drink is not too difficult; the important thing is the process of simmering the sticky rice, while the tea base is similar to making regular milk tea.

The sticky rice flake sauce consists of fresh sticky rice flakes and condensed milk or sugar. The fresh sticky rice flakes are selected from thin, soft, chewy grains with a distinctive aroma. Ms. Huong often chooses Tu Le sticky rice flakes - a famous chewy and fragrant specialty of Yen Bai province.

Fresh glutinous rice flakes are mixed thoroughly with condensed milk or sugar, then simmered over low heat, stirring constantly. To enhance the flavor, a little coconut milk or pandan leaf extract can be added for a natural green color. Simmering time is about 10-15 minutes, until the rice flakes become soft and sticky. Standard glutinous rice flakes should have an attractive natural green color, be soft and slightly chewy, and have a subtly sweet and creamy flavor from the milk.

The tea brewing process is similar to that of regular milk tea. Many people choose jasmine oolong tea, known for its distinctive jasmine aroma. After brewing, you can add sugar or milk to taste.

Next comes the presentation of the sticky rice milk tea. Take a moderate amount of sticky rice and place it at the bottom of the cup, then pour in the milk tea. You can add tapioca pearls or whipped cream to enhance the flavor of the drink.

To enhance its appeal, shops are constantly innovating in their preparation and presentation. Besides young rice flakes, milk tea is also combined with many other toppings such as jelly, tapioca pearls, cream cheese, flan, etc., creating a diverse range of flavors and textures.

Sticky rice flake milk tea is not only delicious but also offers a unique experience; the sweet taste of the milk tea blends perfectly with the soft, chewy texture of the sticky rice flakes, the slightly nutty and creamy flavor of the soft cream, and the chewy tapioca pearls.

Ms. Pham Thi Huong, residing in Cam Thuong ward (Hai Duong city), is a "devotee" of bubble tea. As soon as sticky rice bubble tea appeared, she immediately sought it out. Ms. Huong stated: "One advantage of sticky rice bubble tea is its light, refreshing flavor; it's not too sweet, so I'm not too worried about losing weight while enjoying this drink."

With summer approaching, enjoying a cup of sticky rice milk tea is a delightful experience, both refreshing and energizing.
