Ingredient:
- Chicken
- Lemongrass, shallots, lime leaves, onions, chili peppers, lime, banana leaves
- Coarse salt, fish sauce, cooking oil, seasoning powder, turmeric powder, sugar, oyster sauce
Making:
- After buying the chicken, to remove the unpleasant smell, rub it with coarse salt to remove the slime, then rinse it thoroughly and let it drain.
- Cut off the base of the lemongrass with a knife, then wash and drain it. Next, crush the lemongrass and cut it into long pieces. Peel the onion and cut it into rings.
- Peel and wash the shallots, finely chop 2 of them, and thinly slice the remaining 2. Remove the stems from the chili peppers, wash them, and chop them finely.
- Wash the lime leaves thoroughly, let them dry, then cut them into thin strips.
- Mix the chicken marinade according to the recipe: sugar, seasoning powder, fish sauce, turmeric powder, oyster sauce, along with the mixture of chopped shallots and chili peppers, then mix well until all the ingredients are combined. Finally, rub the mixed seasoning onto the surface of the chicken and marinate for about 30 minutes.
- First, line the bottom of the pot with banana leaves, then spread a layer of coarse salt. Next, add the chopped lemongrass and onions on top of the salt.
Next, place the marinated chicken in the pot, sprinkle lime leaves around it, and top with sliced red onions.
- Place the pot on the stove, cover with a lid, and steam for about 30 minutes over medium heat.
- Once the chicken is steamed until cooked, transfer it to a plate, sprinkle shredded lime leaves on top for garnish, and it's ready to be enjoyed.
Steamed chicken with coarse salt is not only visually appealing but also incredibly delicious. The chicken is tender and juicy, subtly flavored with lemongrass, and absolutely fantastic when dipped in a mixture of salt, pepper, and lime juice.
