Ingredient

1kg field crab, 0.5kg tomato, 2 pieces of tofu, 1.5kg vermicelli, 1 cup vinegar, water spinach, banana flower, bean sprouts, basil, green onion, chili, lemon, 5 shallots. Spices: salt, MSG, shrimp paste, fish sauce.

Perform

Soak the field crabs in water for about 1 hour to remove all the dirt and sand, then rinse with clean water. Then, peel off the crab shell and set aside. Next, put the crabs in a mortar and add a little salt, pound them until smooth.

Adding salt helps the protein in the crab meat to stick together better, creating a lump when cooked. Then, put it in a pot with 3 large bowls of water, stir well, filter the water, and discard the crab residue. For the shell, use a small spoon to scoop out the crab fat and put it in a small bowl, season with a little ground pepper and seasoning powder.

Wash tofu, cut into small pieces and fry until golden brown. Wash green onions, chop half and cut the other half into 3cm pieces. Peel and chop shallots. Wash tomatoes, cut into wedges.

Pick and wash the water spinach, cut the stems into thin strips. Thinly slice the banana blossom horizontally, soak in water mixed with vinegar. Wash the raw vegetables, bean sprouts, and basil.

Heat 150ml of cooking oil or lard in a deep pan, then add the sliced ​​shallots and fry until golden brown. Next, add the crab paste and stir-fry until thick, then add the crab paste on top of the crab meat to color, slice the green onions and sprinkle on top for fragrance.

Add chopped tomatoes with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, stir-fry for about 2 minutes then turn off the heat.

Put the pot of crab water on the stove to boil. When it boils, add the stir-fried eggplant. Continue to boil until the crab meat forms a film and floats, then reduce the heat, add the stir-fried crab fat, season with fish sauce, salt, and MSG to taste and turn off the stove.

Blanch the noodles in boiling water and then put them in a bowl. When eating, scoop the broth in, add crab meat and tofu on top. Eat hot with raw vegetables, shrimp paste (depending on each person's taste), lemon, and chili.
