Vibrio bacteria are coastal bacteria that commonly accumulate in oysters. There are many different types of Vibrio bacteria, most of which only cause nausea or diarrhea, according to The Conversation (Australia).
However, there is a type of Vibrio bacteria called Vibrio vulnificus that causes serious health problems such as blisters on the skin, blood infections, and even amputation of limbs.
It is impossible to distinguish healthy oysters from those infected with Vibrio bacteria with the naked eye. Infected oysters still look fresh and taste similar to healthy oysters.
However, Vibrio bacteria, including Vibrio vulnificus, are very sensitive to high temperatures. Therefore, cooking oysters thoroughly can completely kill these bacteria.
Recently, several countries, such as the United States, have employed various methods to reduce Vibrio bacteria in oysters. This helps to preserve the flavor and enjoyment of eating raw oysters. These methods include freezing, low-temperature pasteurization, irradiation, or high-pressure processing of oysters.
However, according to the US CDC, the safest way is still to cook oysters properly. When cooking, ensure the oyster meat inside the shell reaches at least 63 degrees Celsius and is heated for at least 15 seconds. This will completely kill any Vibrio bacteria in the oysters.
