
Lima, the capital of Peru, is predicted to be a new destination for global food lovers, after two of the city's restaurants made it into the Top 10 of the "50 Best Restaurants in the World 2025" list, with Maido proudly holding the number one spot.
This prestigious award, considered the "Oscar of the culinary industry," was announced at an awards ceremony held in Turin, Italy.
Rising from fifth place last year, Maido – the restaurant of chef Mitsuharu “Micha” Tsumura – claimed the top spot thanks to its Nikkei style of cuisine, a fusion of Japanese culinary techniques and distinctive Peruvian ingredients.
According to The World's 50 Best Restaurants, Maido “creates an experience that is both authentically local and modern, innovative and deeply rooted in a fusion of cultures.”
At the awards ceremony, Chef Micha emotionally shared: “This is Maido’s 16th year. I believe that cuisine, from food to service, can create miracles.”
Not only Maido, but Kjolle – the restaurant of chef Pia León, wife of renowned chef Virgilio Martínez (Central) – also made it to the 9th position. The appearance of two Lima representatives in the Top 10 further confirms Peru's new status as a global culinary capital of innovation.

Highlights on the world's culinary map
Second on the list is Asador Etxebarri in Atxondo, Spain, renowned for its traditional charcoal grilling techniques. Third is Quintonil in Mexico City, where chef Jorge Vallejo celebrates authentic Mexican cuisine with modern innovations.
This year's list also sees the rise of Diverxo (Madrid, 4th place), Alchemist (Copenhagen, 5th place), and Gaggan (Bangkok, 6th place), all pursuing unique culinary philosophies that exploit surprise in flavor and presentation.
This year, Asia left a strong mark with six Bangkok restaurants making it into the Top 50. Most notably, Potong, a Thai-Chinese restaurant located in Bangkok's Chinatown, ranked 13th, marking its first appearance on the list.
Potong's five-story space, once a herbal medicine shop since 1910, has now been transformed into a destination for creative culinary experiences steeped in heritage.
Tokyo is represented by Sézanne (ranked 7th) and Narisawa (ranked 21st), while Hong Kong has Wing (11) and The Chairman (19) - two restaurants showcasing the class of contemporary Chinese cuisine.
Meanwhile, London's Ikoyi restaurant was the "fastest climber," surging 27 places from 42nd last year to 15th, renowned for its West African-inspired smoked jollof rice.
In the US, the only representative in the Top 50 was Atomix (New York), ranked 12th and also recently received the Outstanding Hospitality Service award at the James Beard Awards.

The big names and "Hall of Fame" of world cuisine
According to the rules, each restaurant can only win the "world's number one" award once, after which it will be included in the "Best of the Best" program, a list honoring global culinary icons.
This list currently includes legendary names such as: Geranium and Noma (Copenhagen), Eleven Madison Park (New York), The Fat Duck (England), Osteria Francescana (Italy), Mirazur (France), and Central (Peru). The 2024 champion - Disfrutar (Barcelona) - has also officially joined this list.
This annual list is compiled from votes of more than 1,100 international culinary experts, including journalists, chefs, and restaurant professionals from 28 regions around the globe.
The criteria consider not only flavor and technique but also creativity, the diner's experience, and contributions to the development of international culinary culture.
2025 marks a new era for global gastronomy, where cities like Lima, Bangkok, Tokyo, and Mexico City are no longer secondary destinations, but are becoming centers of innovation, alongside Paris, London, and New York, in elevating the value of cuisine to become international cultural icons.
"Cuisine is not just an art of taste, but also a cultural language with the power to connect the globe," says chef Mitsuharu Tsumura, Maido.
