Rice noodles with vinegar and fish sauce, a delicious dish characteristic of summer.

Arriving in Hue during the hot weather, Ms. Nguyen Minh Lan and Mr. Tran Huu Trung, a couple from Ho Chi Minh City, spent a considerable amount of time researching the city's signature dishes through social media. Ms. Lan recounted: "While watching videos on TikTok and Facebook, I was particularly interested in 'bun giam nuoc' (rice noodles with vinegar and fish sauce). The name itself sounded unusual, and another interesting point is that this specialty dish only appears in the lagoon area. Therefore, my curiosity only grew."

According to the information she read, she went to a vermicelli noodle soup with sea snails restaurant on Chi Lang Street (Phu Xuan Ward) in the late afternoon. When she first tasted the vermicelli soup with sea snails, featuring fresh vegetables, vermicelli, shrimp, broth, and especially the sea snail legs, Ms. Lan found it incredibly unique and delicious.

She shared: "This dish has the slightly bitter taste of raw vegetables, the sweetness of the broth, the sourness of vinegar, the fragrant aroma of shrimp paste, and the refreshing, crunchy texture of the shrimp. In the hot summer weather, this dish is easy to eat and enjoyable."

Trung agreed: “What I like most is that even though they use fresh snails, they don't have a strong, fishy taste. Besides the refreshing and unique flavor, the location of the shop is also great because it's at the beginning of the old town street.”

In a small restaurant near the river, the couple enjoyed their meal while observing the daily life of the locals. “Although the food doesn’t look particularly appealing, the more you eat, the more delicious it becomes. Perhaps it’s because of the unique flavors and the charming atmosphere. If friends or relatives come to Hue , I will definitely recommend this dish to them,” Mr. Trung said.

Besides vermicelli with vinegar sauce, many other traditional dishes of Hue also leave an unforgettable taste for tourists during the summer days.

Tran Thi Oanh, a tourist from Hanoi , said she "fell in love" with clam noodle soup from the first time she tasted it. According to her, made from humble clams, clam noodle soup has a very unique flavor thanks to the meticulous way it's seasoned and the combination of ingredients.

Ms. Oanh said, "This dish reminds me of Hanoi's snail noodle soup." However, snail noodle soup has a mild sourness from the vinegar, while clam noodle soup is rich in salty and spicy flavors. Both of these delicious dishes require elaborate preparation with multiple layers of flavor. In particular, both snail noodle soup and clam noodle soup cannot be without their broth, which is made from the water used to boil snails and clams.

"Despite the very affordable price, the clam noodle soup has a very harmonious flavor. The sweetness of the clams combined with fresh shredded taro, shredded mango, and fresh vegetables creates a refreshing, easy-to-eat dish that's not at all cloying. I ate clam noodle soup on my first day in Hue and came back again the next day. This dish is truly perfect for summer weather," Ms. Oanh added.

According to the owner of a clam noodle shop on Ung Binh Street (Vy Da Ward), summer is the time when clam dishes are most sought after by tourists because clams are plump, sweet, and flavorful during this season. Combined with fresh vegetables, shredded taro, shredded mango, and the sweet and savory clam broth, the dish is both refreshing and easy to eat on hot days. Besides its distinctive flavor, the price of clam noodles and clam rice is also very affordable, only 15-20 thousand VND per serving with all the accompanying ingredients. Therefore, many tourists, after trying it, often return several times because they love this rustic, simple, and refreshing taste.

Besides clam noodle soup or vinegar noodle soup, Hue's summer cuisine also captivates tourists with the sweet, fragrant taste of lotus seed sweet soup, which is in season.
