At Thanh Phuong oil pressing facility in Pho Hien ward, the number of customers has been increasing in recent days. The facility has been operating stably for 6 years, specializing in pressing peanut oil and sesame oil. Ms. Tran Thi Phuong, the owner of the facility, said: On average, each month, we supply the market with nearly 100 liters of finished oil, at a price of 140,000 VND/kg of peanut oil and 260,000 VND/kg of sesame oil. Many people also bring home-grown peanuts and sesame seeds to press to be assured of the quality, with a labor cost of 10,000 VND/kg of raw materials.
According to calculations, to press 1 liter of peanut oil, about 2 - 2.5 kg of peanuts are needed, and to have 1 liter of sesame oil, 2.5 - 3 kg of sesame seeds are needed. The clarity and transparency in the oil pressing process has helped consumers feel more secure when choosing.
Ms. Nguyen Thi Mung in Son Nam Ward prefers peanut oil grown and pressed by her family. Ms. Mung shared: My family has a few acres of peanuts. After harvesting, we dry them, peel the kernels, and then bring them to an oil pressing facility. The oil is fragrant, clear, and can be preserved for a long time. Although the price is a bit higher, the return is absolute peace of mind about the quality.
Not only stopping at traditional vegetable oils, many families in Hung Yen have returned to using lard in daily cooking. Mrs. Tran Thi Huy in Khoai Chau commune said: For about a year now, my family has mainly used lard in daily cooking. When using lard for frying and stir-frying, the dishes are more fragrant, naturally fatty and not greasy. Previously, I was also worried that lard could affect my health, but after careful research, I know that if used in moderation, this food is not only harmless but also beneficial to the body.
Similar to Ms. Huy, Ms. Nguyen Phuong Ha's family in Van Giang commune has recently also frequently used lard to prepare dishes. This comes from her desire to find a natural source of fat, limit the consumption of refined oils and products containing preservatives. Ms. Ha said: I look to buy "clean" lard, pigs raised by acquaintances with bran and vegetables produced by the family or buy "natural" lard. The price will be higher than buying lard at the market, but I feel secure eating it and the flavor is also more delicious.
In fact, consumers today increasingly tend to return to traditional foods that can control their origin, processing method and safety level. Peanut oil and sesame oil not only contain a lot of unsaturated fat that is good for the heart but also retain the natural flavor of the dish. Pork fat, if processed cleanly and used in moderation, is also a suitable source of fat for many Vietnamese dishes, especially fried dishes thanks to its good heat resistance.
