In keeping with this atmosphere, the trend of vegetarianism is increasingly spreading in Thai Nguyen, not only among Buddhists but also becoming a choice for many people, especially young people.

In recent years, vegetarian restaurants have become increasingly common throughout the province, attracting customers not only on the 15th and 1st days of the lunar month or during Buddha's Birthday celebrations, but also on ordinary days. This reflects a significant shift in people's views on cuisine : vegetarianism is no longer seen as austere or monotonous, but rather as a way to care for one's health and balance one's spiritual life.

One of the familiar spots for vegetarian food lovers is Buong Restaurant (Phan Dinh Phung Ward). Ms. Vu Thi Tung Hoa, a regular customer of the restaurant, said that what impressed her was the philosophy associated with the word "Buong," meaning letting go and learning to be lighthearted about unnecessary things.

From her personal experience, Ms. Hoa found that switching to a vegetarian diet made her body feel lighter and her mind more open. Beyond health benefits, she believes that vegetarianism is also a way to live more responsibly towards the environment and strengthen relationships within her family and community.

From the perspective of the operator, Ms. Nguyen Thi Huong, manager of Buong Restaurant, said that the restaurant was built not only with the goal of doing business but also to create a "pause" for diners. It's a place where people can slow down, enjoy a healthy meal, and find peace amidst the hustle and bustle of life.

Not only Buong Restaurant, but many other vegetarian restaurants in Thai Nguyen have also recorded a significant increase in customers. At Ngo Chay restaurant, owner Vu Nhat Linh said that vegetarianism has now become a social trend, no longer limited to religious beliefs. The restaurant's customers are very diverse, from the elderly to students, office workers; many people choose to eat vegetarian regularly, not just on a daily basis.

Notably, young people are approaching vegetarianism with a new mindset: proactive and scientific . Duong Quang Minh, a student at Thai Nguyen University of Medicine and Pharmacy, shared that a vegetarian diet makes him feel lighter and more mentally stable, which is beneficial for his studies. Based on his professional knowledge and practical experience, Minh affirms that a properly implemented vegetarian diet still ensures adequate nutrition and offers many long-term benefits.

Ms. Phan Thi Tra, head chef of Ngo Chay, believes that the current trend in vegetarianism is shifting from imitation vegetarian dishes to purely natural vegetarian dishes. Diners are increasingly interested in dishes made from vegetables, mushrooms, and nuts, with few additives and high nutritional value. The trend of vegetarianism for health prioritizes natural and healthy options.

Therefore, the Buddha's Birthday month is not only a spiritually significant occasion, but also a time to better observe the changes in the lifestyles of the people of Thai Nguyen. From simple vegetarian meals, a trend towards a healthy, slow-paced, and responsible lifestyle is gradually emerging, contributing to a new cultural beauty in today's urban life.
