12 Japanese dishes to prevent fatty liver

VnExpressVnExpress12/05/2023

Research shows that a Japanese diet of 12 foods can improve fatty liver disease, prevent the development of cirrhosis and liver failure.

A study published in May by Osaka Metropolitan University Hospital found that popular Japanese foods such as rice, miso soup, and soybeans may help prevent fat from accumulating in the liver, a condition that often occurs in overweight and obese people as a result of an unhealthy diet.

The team tracked the diets and progression of fatty liver disease in 136 people. They scored each individual's diet based on adherence to the 12-component Japanese Dietary Index (mJDI12) . The higher the score, the lower the rate of cirrhosis progression.

The 12 foods in this diet include miso soup, pickles, soy products, green vegetables, fruits, seafood, mushrooms, seaweed, green tea, coffee, beef and pork. Of these, three foods have a significant effect in inhibiting the process of cirrhosis: soybeans, seafood and seaweed.

Experts also found that people who ate more soy products had greater muscle mass and a lower overall rate of fibrosis progression.

Previous research has shown that soybeans are low-fat foods, making them extremely effective in reducing excess fat storage. Seaweed contains alginate, which can prevent the body from absorbing toxins, and fucoidan compounds that enhance liver function and protect the liver.

Symptoms of non-alcoholic fatty liver disease

According to the National Health Service of Japan, early-stage fatty liver does not cause any harm, but can lead to serious liver damage and cirrhosis if not treated promptly.

The group at high risk of fatty liver disease is people over 50 years old, people who are obese, overweight, people with type 2 diabetes, people with high blood pressure, high cholesterol or smoking habits.

Fatty liver is often asymptomatic in its early stages. The most effective way to detect it is with a blood test. People with fibrosis (a severe stage of fatty liver) may have dull or aching pain in the upper right abdomen, extreme fatigue, and unexplained weight loss.

As cirrhosis progresses, the patient experiences more serious symptoms such as yellowing of the skin and whites of the eyes, itchy skin, swelling of the legs, ankles, feet, or abdominal edema.
