Delicious chicken dishes, including shredded chicken salad, are a tempting choice for a family meal during the holidays.
Ingredients for chicken salad:
+ Shredded chicken, bite-sized pieces
+ 1 carrot, 1 onion
+ Shrimp crackers
+ Cilantro, Vietnamese coriander, Vietnamese mint, ginger, garlic, chili peppers, lime, sugar, fish sauce.
How to make chicken salad:
Thinly slice the onions, soak them in ice water, then drain and mix with the juice of about half a lemon. Let it sit for about 5 minutes, then rinse and squeeze out the excess water.
Shred the carrots, mix them with 1/2 teaspoon of sugar and 1/2 teaspoon of salt, let it sit for about 5 minutes, then squeeze out the excess water.
To make the dipping sauce: mix 3 tablespoons lemon juice, 2 tablespoons sugar, 3 tablespoons fish sauce, 1 teaspoon minced garlic, 1 teaspoon minced ginger, and 1 teaspoon minced chili.
Wash the coriander, Vietnamese parsley, and Vietnamese mint thoroughly, drain, and chop finely.
Mixing the salad:
Add shredded chicken, carrots, and onions to a bowl, add 3–5 tablespoons of dressing, and mix well. Then add the herbs and mix again. You can add chili peppers if you like spicy food. The finished dish has a harmonious sweet and sour flavor, and is served with shrimp crackers.

Delicious chicken dish: Chicken and vegetable patties
Lan Huong, a skilled home cook, shares a simple recipe for chicken and vegetable patties. By combining chicken breast with vegetables and a little cornstarch, you can create a delicious and unique chicken dish with an appealing flavor.
Ingredients for chicken and vegetable patties:
Ingredient:
+ 300g chicken breast
+ Coriander
+ 1/2 sweet corn cob, thinly sliced
+ 4–5 shiitake mushrooms
+ 2 tablespoons cornstarch
+ 1 tablespoon of cooking oil
+ Seasonings: bouillon powder, pepper
How to make chicken and vegetable patties:
Wash the chicken breasts, cut them into small pieces, and freeze them for 2-3 hours. Then, grind the chicken meat until smooth, add corn, shiitake mushrooms, and cornstarch, and grind together.
Mix in some cooking oil and cilantro, then shape into flat patties. Preheat the oven for 5 minutes at 200 degrees. Bake for 20–25 minutes at 200 degrees, flipping during baking.

Delicious chicken dishes: Simple and easy-to-make dried chicken with lime leaves.
Ingredients for making dried chicken with lime leaves:
+ 500g chicken breast.
+ 65g brown sugar.
+ 10g turmeric powder, annatto powder
+ Garlic
Fish sauce, salt, soy sauce, cooking oil, five-spice powder
+ 2/3 packet of curry powder
+ 20-30 young lime leaves
+ Add chili peppers to taste.
+ Lemongrass and dried onions
How to make dried chicken with lime leaves:
Step 1: Prepare the chicken by washing it thoroughly with salt, then steaming it with lemongrass and dried onions. Once cooked, soak the chicken in ice water, then remove it and shred it.
Step 2: Marinate the chicken:
Sauté the garlic in oil, then add the spices (except for the lime leaves and chili peppers) and mix well. Mix the mixture with the chicken and let it marinate for about 2 hours, or overnight in the refrigerator.
Step 3:
Cut the lime leaves in half, and cut the chili peppers in half or into thin slices. After marinating the meat for the required time, put the meat, lime leaves, and chili peppers into a pan and stir-fry the meat over medium heat until the liquid evaporates. Then, bake in an oven at 110 degrees for 45-50 minutes, stirring every 15 minutes. Alternatively, bake in an air fryer at 90-100 degrees for 45-50 minutes.
The dried meat can be stir-fried in a pan if you have the equipment. Store the dried meat in an airtight bag for preservation.
