(NLDO) - With a long history of formation and development, Hoa Long wine is an indispensable part of the culinary culture of local people.


Located in Ba Ria City ( Ba Ria - Vung Tau Province), Hoa Long Wine Village has long been a familiar address for many people. In 2016, the wine making profession in Hoa Long Commune was recognized as a traditional profession by the Provincial People's Committee.

According to the People's Committee of Hoa Long Commune, the commune currently has more than 50 households making wine, mainly supplying the province. Each family making wine here has its own secrets, from selecting ingredients, fermenting to distilling. This is what creates the unique, unmistakable flavor of Hoa Long wine.

Hoa Long commune's wine making profession is recognized as a traditional profession.

Taking reporters to introduce his winery, Mr. La Van Tho (owner of Hai Tho winery, Dong hamlet, Hoa Long commune) said that in the past, his family only knew how to make wine according to the method passed down by his father. Later, with guidance from the Department of Industry and Trade and Mr. Tho himself taking food safety and hygiene classes, he applied the one-way rule in wine production.

Specifically, his distillery is divided into areas for cooking, sprinkling yeast, fermenting yeast, distilling wine and canning, each person is in charge of a stage and does not mix things together. Every day, Mr. Tho cooks about 80kg - 100kg of rice and supplies the market with about 300 - 400 liters of wine with prices ranging from 15,000 VND/liter to 43,000 VND/liter.

Hai Tho winery is one of the largest wine jars in Hoa Long commune.

With over 30 years of experience in wine making, Mr. Tho shared that to have a quality batch of wine, in addition to technique and experience, it is necessary to pay attention to the type of yeast, rice and water used for cooking.

"Currently, there are Chinese yeasts on the market that help shorten the stages of making wine, but if you drink these types of wine, they are very toxic, will cause headaches, and can easily cause poisoning. Some people even use methanol to mix with wine, then sell it on the market. These are extremely dangerous practices that affect the health and lives of others and need to be checked and prevented promptly," said Mr. Tho.

The main ingredients for making Hoa Long wine are rice, yeast and water. Rice is usually chosen to be fragrant and sticky. Yeast is made from grains such as soybeans, glutinous rice, and some herbs. The water used to make wine is clean well water, free of impurities.

The process of making Hoa Long wine is quite elaborate and requires meticulousness. After being soaked and cooked, the rice will be mixed with yeast for fermentation. After a period of time, this mixture will be distilled to get wine. After distillation, the wine will be allowed to settle in wooden barrels or earthenware jars to remove impurities and enhance the flavor.

Every day, Hoa Long commune supplies the market with hundreds of liters of wine.

However, in recent years, the traditional wine-making profession in Hoa Long is facing many difficulties due to the development of industrial wines. To preserve and develop the traditional profession, Hoa Long people have continuously invested in building modern production facilities, ensuring food hygiene and safety. In addition, fairs and festivals are also opportunities to introduce Hoa Long wine to a wide range of consumers.
