With the theme "Season in the Moonlight Garden," the menu features dishes made entirely from plant-based, locally sourced ingredients.

The first plant-based fine dining menu, or what is more simply called "high-end culinary style" in Vietnamese, consists of dishes that have been carefully selected, researched, and refined using fruits, vegetables, seeds, and distinctive local spices from all regions of Vietnam.

From large, vibrant red tomatoes to bright yellow or deep purple hues, each variety offers countless possibilities, enriching the culinary experience as the tomatoes are dried for 12-16 hours at the appropriate temperature.

Vietnam's diverse climate and soil have nurtured a rich variety of tomato plants. Under the skillful hands of Hum's chefs, tomato-flavored dishes are cherished and transformed, offering unique taste experiences from different tomato varieties.
