While Hanoi is famous for its Vong village rice flakes, in the Southwestern region of Vietnam, especially in provinces and cities like Can Tho, Vinh Long, and An Giang , the Khmer people also have a equally famous type of rice flake – flattened rice flakes.

More than just a delicious and rustic dish, flattened rice flakes also embody the cultural values, beliefs, and work ethic of the Khmer community in Southern Vietnam for hundreds of years.

A dish that reflects the distinct Khmer identity in the Southwestern region of Vietnam.

Flattened rice flakes are made from young glutinous rice harvested at the beginning of the season, when the grains are just turning red at the tips, still full of milk and not yet fully ripe. The finished product has a natural ivory white color, a sweet and nutty flavor, a soft and chewy texture, and the distinctive aroma of fresh rice.

While Hanoi's green rice flakes are distinguished by their emerald green color, the flattened rice flakes of the Southwestern Mekong Delta evoke fond memories with their rustic, genuine charm, much like the people of that region.

For the Khmer people of Southern Vietnam, flattened rice flakes are not simply a snack but are also closely associated with their spiritual life.

For over a century, this dish has been a staple at the Ok Om Bok festival – the moon worship festival held on the 15th day of the 10th lunar month. People use flattened rice flakes to offer to the Moon god, expressing gratitude for a bountiful harvest and praying for favorable weather and a prosperous new year.

Whenever the festival season arrives, the atmosphere in Khmer villages becomes more vibrant than ever. People are busy harvesting young glutinous rice, preparing ingredients, and making flattened rice flakes together. This is what has made flattened rice flakes a distinctive cultural symbol of the Southwestern region of Vietnam.

To create these delicious flattened rice flakes, the Khmer people go through many meticulous steps. The main ingredient is young glutinous rice, harvested early before it is fully ripe to retain its stickiness and natural sweetness.

After harvesting, the glutinous rice is sifted clean and then soaked in water overnight for a specific amount of time to achieve the right softness. Next, the rice is dried before being roasted in a traditional clay pot. This step requires considerable experience because too much heat will burn the rice, while too little heat will cause the grains to stick together and not expand properly.

During roasting, people continuously stir the rice until the grains crackle and release their characteristic aroma. Then, the rice is put into a large mortar and pounded continuously to remove the husks and create a chewy texture. Finally, the rice is sifted clean and stored in airtight bags for preservation.

Each step of the process reflects the skill, patience, and long-standing experience of the Khmer people in the Mekong Delta. It is this meticulousness that creates the unique flavor of this specialty dish.

Diverse ways to enjoy

The most traditional way to eat flattened rice flakes is to place them on a banana leaf and enjoy them directly to fully appreciate the sweet and nutty flavor of the young, early-season glutinous rice.

Nowadays, flattened rice flakes are transformed into many attractive dishes, the most famous of which is flattened rice flakes mixed with coconut, rich coconut milk, fragrant grated coconut, and a mild, easy-to-eat sweetness. There are also flattened rice flake sticky rice, flattened rice flake sweet soup, or flattened rice flake patties – a dish combining flattened rice flakes and minced meat, creating a unique and appealing flavor.

The diversity in preparation methods makes flattened rice flakes not only a traditional dish but also a specialty loved by many tourists when visiting the Southwestern region of Vietnam.
