(Dan Tri Newspaper) - After a month of suspension due to violations related to ingredient storage and hygiene in the processing area, Nguyen Ninh sticky rice cake shop welcomed a large number of customers on its first day of reopening.
On the morning of February 3rd, Ms. Mai (30 years old, residing in Hoang Mai district) visited the traditional Nguyen Ninh sticky rice cake shop at 11 Hang Than Street (Ba Dinh district, Hanoi ) to order cakes for her upcoming engagement ceremony.
The woman shared that she had intended to buy cakes from this shop before Tet (Lunar New Year), but the shop had posted a notice that it was closed. Upon further inquiry, she learned that the shop was being inspected by authorities regarding food safety and hygiene and had temporarily ceased operations for repairs.
Ms. Mai tried buying cakes from several other shops, but wasn't satisfied with the taste, so she decided to wait until after Tet. "I met the shop owner and learned that they only reopen after Tet. Luckily, the shop opened early, so I was still able to order cakes for the engagement ceremony," the woman shared.

According to Mr. Nguyen Duy Anh (68 years old), the owner of the establishment, the shop reopened on the morning of February 3rd, from 6:30 AM to 9:00 PM.
After working with the authorities, the store has upgraded its entire processing area.

The store also built two separate entrances to the processing area to ensure the production process runs in a consistent direction, helping to avoid overlapping between raw materials, finished products, and staff, thereby minimizing the risk of cross-contamination.
Mr. Anh said the repairs were completed 10 days before Tet. After an inspection by a joint team from the city and Ba Dinh district, the store was allowed to reopen.
However, because the rice cakes contain no preservatives, they are difficult to keep for long. Near Tet (Lunar New Year), the traditional craft village lacks high-quality ingredients, so the shop waits until after Tet to select the freshest and best quality rice to ensure the best cakes.
The man admitted that closing the store during the Lunar New Year holiday caused significant losses for the business.

Previously, on January 2nd, the Hanoi City Inter-agency Food Safety Inspection Team No. 1 conducted a surprise inspection of the Nguyen Ninh rice cake facility. The inspection revealed numerous violations related to raw material storage and hygiene in the processing area.
Specifically, sacks of dried rice flakes – the main ingredient in making the cakes – were stacked right at the entrance, against damp and moldy walls. Furthermore, the facility failed to produce documents proving the origin of the ingredients, food additives, and packaging that came into direct contact with the cakes.
On the morning of January 3rd, authorities ordered the establishment to temporarily cease operations to rectify the violations. After working with the authorities, the owner admitted the mistakes and promptly implemented corrective measures.
He explained that due to the small size of the shop located in the old town, the kitchen space was not up to par.
Some documents were missing, so when the inspection team arrived, the shop was unable to present them immediately. Shortly afterward, the family provided all the necessary documents and proceeded to repair the cooking stove in accordance with the regulations of the health authorities.
