The plump, tender chayote shoots stretch out in the sunlight.

With its unique climate and soil, the young shoots are green, crisp, and possess a distinctive sweetness rarely found elsewhere.

The harvested vegetables are sorted, bundled separately, and supplied to restaurants and sold to tourists.



The bundles of vegetables are neatly arranged, ready to be carried back home by tourists.

After each harvest, the farmers will re-tie the trellises and add more netting so that the new crop of vegetables can grow in the sun.

Automatic irrigation systems help reduce labor for farmers in Tam Dao.
