Growing up and working hard in a foreign land, sometimes when I feel a longing in my heart, the image of jackfruit salad comes back like a dish from afar and I find it again. Of course it is just an aftertaste, but it is a scent that evokes nostalgia. The more I miss it, the more I look forward to the day I can return to eat the soul of my hometown. No wonder, as soon as I put down my backpack, after a few questions from my mother about work, the child immediately got to the point: Mom, work is fine; as for food, I want to eat jackfruit salad.

Jackfruit is a popular tree grown in the Central countryside. Of course there are a lot of jackfruit gardens. Jackfruit in the yard, next to the well, and the straw trees also have green branches and good fruit. I remember when I was little, I wanted to eat jackfruit salad. My mother told me that if I wanted to eat it, I had to... roll on the tree. My sister and I went to the back garden and just pressed on the jackfruit balls to pick them. My mother laughed and explained that this thing was useless because it was created from the male pistil, it had a bitter taste and was inedible, and it would fall off after a short time on the tree. From then on, I learned that young jackfruit was pollinated from the female pistil, the fruit was small but rough, the thorns were sparse and even, making it delicious to make mixed dishes. In addition to mixed dishes, young jackfruit is also used to braise fish and make soup. Furthermore, young jackfruit "goes" very well with vermicelli and fish sauce.

Now, even though the whole neighborhood makes jackfruit mixed with shrimp, pork belly, pig ears, etc., my mother is still "faithful" to the original: boiled young jackfruit, sliced, mixed with a mixture of fish sauce, lemon, sugar, chili, garlic, and a little peanuts and coriander. My mother said that the shrimp and meat overpower the smell of the young jackfruit, what a waste. At meals in my family, no matter what the dish, the simple jackfruit mixed dish still plays the main role, chopsticks from all directions come looking for it. When I'm tired of rice, just scoop up the jackfruit mixed with crispy rice paper and make a delicious meal.

I have been addicted to jackfruit salad since I was a child. It can be said that all of this gluttonous boy’s childhood was spent on jackfruit salad. A rustic dish is inseparable from the memories of the countryside. The old jackfruit tree with its lush branches and leaves is a whole poetic world
