Located in an alley on Tran Luu Street, Thi Cau Ward, Mr. Hoang Xuan Vinh’s (65 years old) restaurant is known by many people for its burnt liver pho. This is a familiar breakfast place for many people. The unique feature is that the liver is fried until it is burnt black in a pan of oil.

Mr. Vinh said that in the early days of selling burnt liver pho, he was not able to convince customers. It took him 6 years to adjust the recipe, improve the quality of the product, and season the spices to his liking to get a delicious bowl of pho. 'When the liver was delivered, we had to fry it, leaving the black pieces and throwing away the yellow ones. Every day, the restaurant consumes about 30kg of liver and sells more than 300 bowls of pho, with more on weekends,' the restaurant owner said.
The restaurant has a special space in a small alley, people often call it "the pho restaurant facing the wall".
The chef continuously stirs the liver in the pan for about 20 minutes until it is burnt black, then takes it out.
Fresh pork liver is carefully processed to remove the odor, then fried over high heat until charred black, but still retains the softness inside and the aroma of the liver.
The oil used to fry the liver is changed after each batch to avoid burning.

A full bowl of pho includes charred liver, lean meat that must be tender loin, thinly sliced, kidney marinated with spices and stir-fried with onions, tomatoes and garlic. Each bowl of pho costs from 30,000 to 50,000 VND.

'I have been eating here since I was a child, my father used to take me here for breakfast. I really like to eat liver pho here, because the taste is familiar and suits my taste. Every week, I come here to eat about 2-3 times'.
