At the end of June, the Vietnamese fruit market was bustling with many types of fruit sold at super cheap prices. Consumers had many choices of other fruits such as mango, rambutan, watermelon, plum, etc. However, lychee was widely available on fruit stalls and was favored by many consumers.
According to a survey by the Family & Society Newspaper (Health & Life Newspaper), depending on the quality, the selling price ranges from 10,000 - 20,000 VND/kg, depending on the type. There are places that sell for only 8,000 VND/kg.
Lychee is now sold at super cheap prices.
The advantage of lychee is its characteristic sweetness, not too strong combined with an attractive aroma so you can eat it forever without getting bored. Lychee and shrimp salad
Ingredients for lychee and shrimp salad
+ 300gr shrimp
+ 300gr lychee
+ 200gr mango
+ 150gr carrots
+ 100gr peanuts
+ Herbs such as basil, marjoram, coriander, onions
+ Chili, garlic, ginger, lemon
+ Seasoning includes seasoning powder, sugar, chili sauce, fish sauce, white wine.

How to make lychee salad mixed with shrimp
Step 1: Wash the shrimp, peel, remove the head, leaving the tail for beauty. Then, cut along the back, remove the dirt vein and wash again. Drain and marinate with 1 teaspoon of seasoning powder.
Step 2: Wash and shred mango and carrot and soak in ice cold water. Wash lychee and soak whole in ice cold water for about 30 minutes, then peel, remove seeds and take out lychee flesh.
All ingredients are soaked in ice to keep them crispy.
Step 3: Peel 1 garlic bulb, mince 1 chili. Pick, wash, and chop the herbs. Crush the roasted peanuts.
Step 4: Blanch the shrimp by adding 1 piece of shredded ginger, 1 sliced onion, and 1 teaspoon of white wine to a pot of filtered water. Bring the mixture to a boil, then add the marinated shrimp and blanch for about 2 minutes, then remove and place in ice water.
Step 5: Mix the dressing as follows: 4 tablespoons sugar, 2 tablespoons lime juice, 1/2 tablespoon chili sauce, 2 tablespoons water and 2 tablespoons fish sauce, stir well. Then, add the chopped garlic and chili.
Step 6: Mix the salad: Drain the mango and carrots, then put them in a bowl with the peeled lychee, blanched shrimp, chopped vegetables and peanuts. Mix well, then slowly add the dressing, stir well to let the spices soak in. Do not squeeze hard because it will soften the vegetables. Mix well and let it sit for 10 minutes to soak in before enjoying.
