How to make pickled plums with fish sauce, garlic and chili:
Step 1: Wash the black plums several times with water, you can soak them in diluted salt water for about 15 minutes and then rinse them clean. Boil the water to about 60-70 degrees Celsius, then put the plums in, cover and let them cool. Do not boil the plums in boiling water, as this will make the plums hard and not mushy. After about 15-20 minutes, check that the plums are soft and easy to peel, then take them out and drain.
Step 2: Boil fish sauce, sugar, water and dissolve sugar, let cool.
Then put the canarium in a clean, dry jar and pour the fish sauce over the canarium. Next, add the garlic and chili.

+ 300gr minced meat
+ Scallions, pepper, shiitake mushrooms, wood ear mushrooms
How to make black plum stuffed with meat:
Step 1: Stew the black plums using the formula 2 boiling water / 1 cold water and add the plums to stew. When the plums are soft enough, scoop them out, remove the seeds and use only the flesh of the black plums.
Step 2: For the meat filling, soak the shiitake mushrooms and wood ear mushrooms, clean them, and chop them finely. Wash and chop the green onions, then mix them with the minced meat. Add pepper, MSG, and fish sauce for flavor. Then put the meat in the separated filling and steam until cooked.
