100 dishes from Ham Ninh crab set Vietnamese record

Mr. Ho Dac Thuan, Director of Phu Quoc City's Center for Culture, Sports and Broadcasting, said that with the aim of promoting traditional specialties, spreading Phu Quoc's unique cuisine to domestic and international tourists and stimulating tourism for the Pearl Island, Phu Quoc City's Professional Chefs Association coordinated with the Center for Culture, Sports and Broadcasting, and the Economic Department of Phu Quoc City to organize an event to prepare and perform 100 dishes from Ham Ninh crab. The event had the participation of 60 professional chefs from resorts and restaurants in Phu Quoc and other provinces and cities nationwide.

Mr. Duong Duy Lam Vien, General Secretary of the Central Committee of the Vietnam Record Association, Director of the Vietnam Record Institute and Ms. Nguyen Thi Quynh Ngoc presented the Vietnam Record Certificate to the representative of the Professional Chefs Association of Phu Quoc City.

Through the talented hands of the chefs, Ham Ninh crabs are processed into attractive dishes with a variety of methods and culinary styles. Salads: Crab salad with passion fruit sauce; papaya crab salad; Thai spicy crab salad; crab salad, Dalat flower vegetables with avocado and coriander sauce; crab fruit salad; coconut crab salad.... Grilled, fried, and roasted dishes: Tempura fried crab legs; baked crab; Ham Ninh crab grilled with sake; pan-fried crab with sea urchin pate and Phu Quoc pepper sauce; tamarind fried crab; Hong Kong salt fried crab... Soups, porridge, and hotpots: Crab hotpot; 9-grain macrobiotic crab porridge, Tien Vua crab soup, sea cucumber crab soup with chicken breast; winter melon crab soup with lingzhi mushroom; King flower crab soup; Crab soup with Son Doc rice crackers... Braised, cooked and stewed dishes: Crab braised with bitter melon and herbs; crab cooked with fermented bean curd and vermicelli; slow-cooked crab shell with soy sauce; coconut crab curry... Sauces: Crab with Phu Quoc durian sauce; soft-shell crab with salted egg sauce; Ham Ninh crab with Phu Quoc pink salt and pepper sauce; crab with lotus sauce; crab with XO sauce... Fried and spring rolls: Cho Lach fruit crab spring rolls; pandan spring rolls with crab meat; fried crab; king crab rolls... Rice and noodle dishes: Crab noodle soup; stir-fried crab noodles with tamarind sauce; crab vermicelli; crab rice with green chili; Ham Ninh crab sushi; Beijing crab sticky rice; Spanish-style crab rice...

Professional chefs from resorts and restaurants in Phu Quoc and provinces and cities across the country participated in the event.

After the process of monitoring, counting and evaluating, the representative of the supervisory board of the Vietnam Record Organization - VietKings recorded the total number of dishes made from Ham Ninh crab at the event as 100 dishes, made by 60 chefs from 20 teams. The number of dishes meeting the target, along with the elaborate preparation process, beautifully presented and delicious dishes, officially helped the Phu Quoc City Professional Chefs Association successfully set a Vietnamese Record.

Nature seems to have favored Ham Ninh sea area with its mild, cool climate all year round. The rich ocean ecosystem creates an abundant food source, so the seafood here is very rich, diverse, and fresh, especially crabs. Because the sea area is located deep in the Gulf of Thailand, Ham Ninh is still pristine and has not been much affected by seafood tourism , so the marine environment here has nurtured the famous delicious crabs that make up the brand of this island.

Dishes made from Ham Ninh crab

Ham Ninh crabs usually live on the seabed about 10 - 20m deep, hiding in coral reefs or burying themselves under the sand. The crab's body is small but its meat is firm, very fragrant, with a rich, sweet, and delicious taste that cannot be found anywhere else. In August 2022, Ham Ninh crabs officially received collective trademark certification. This is a source of pride and motivation for the fishing villagers to strive to preserve and develop Ham Ninh crabs into a famous specialty of the Pearl Island.
