In Singapore, researchers at Nanyang Technological University have developed an artificial intelligence model capable of predicting bacterial growth in food, thereby helping supermarkets and wholesalers more accurately determine expiration dates and storage conditions.

This technology allows retailers to manage inventory more efficiently , minimize waste of usable food, optimize the supply chain, and reduce waste in distribution.

Dr. Youssef Ezzaky, a researcher at Nanyang Technological University, Singapore, said: "We simulated real-world storage conditions and observed bacterial growth. From there, we collected data and fed it into a machine learning system to train the model, which helps predict the level of contamination more accurately."

The new AI model can predict levels of bacterial contamination, helping supermarkets accurately determine expiration dates and reduce food waste.

Based on this model, the system can estimate the level of bacterial contamination in various types of food, thereby supporting improved accuracy in food safety management and reducing the risk of having to discard unnecessary goods.

Professor William Chen from Nanyang Technological University, Singapore, said: "The AI-generated data shows a very high degree of similarity to the real-world data we measured. This proves that the model can be used to track bacteria in food in practice."

According to the research team, this technology not only helps reduce food waste but can also support energy savings in cold storage by optimizing storage temperatures while ensuring safety.

Several supermarket chains in Singapore are currently considering piloting the model, given the country's heavy reliance on food imports and its view of reducing food waste as part of a long-term food security strategy.
