The chemical composition of rock sugar is saccharose (sucrose), which is completely identical to white granulated sugar. Rock sugar is made from a solution of sugar and water, so it is thinner than granulated sugar, giving it a "cooler" sensation. However, if you eat a lot of rock sugar, your total sugar intake can still be high.
There is currently no scientific evidence to suggest that rock sugar is healthier than white granulated sugar. Rock sugar only provides sucrose and does not contain any significant additional vitamins or minerals. The daily intake of rock sugar is similar to that of white granulated sugar.
The American Heart Association recommends that women consume no more than 100 calories of added sugar per day from food and drinks (equivalent to 25 grams of sugar per day), and men no more than 150 calories (38 grams of sugar).
