The website describes sour fish soup as having the sweetness of cooked fish combined with the sour and spicy flavors of the accompanying spices and vegetables. The fish used in the soup is usually catfish that lives in freshwater. In addition, the dish also uses elephant foot yam, bean sprouts, and okra to increase the sweetness. Diners should use it with onions, coriander, and Vietnamese coriander.
Each region will have a different way of preparing fish soup. In the North, when cooking soup in the summer, housewives often use sour plums to create a sour taste instead of tamarinds like in the South. Some places in the West add wild cotton flowers.
This is the first time that sour fish soup has appeared in the Taste Atlas rankings. Previously, many other Vietnamese delicacies were also honored, such as coffee and beef dipped in vinegar. Balut was ranked as the worst dish.
Founded in 2015, Taste Atlas connects with 9,000 local restaurants, introducing more than 10,000 dishes to readers, thousands of reviews, and research from culinary experts and chefs.
