Lac Duong district has over 66% of the population being ethnic minorities, of which the K'Ho ethnic group from the Central Highlands accounts for the majority. The K'Ho people live in villages surrounded by mountains and forests, so they have to search for available ingredients in the forest or in their home gardens to prepare their dishes. Each season has its own food, the ingredients used to make the dishes are always fresh and rich in flavor such as: wild bamboo shoots, stream fish, buffalo meat, smoked pork, wild vegetables picked from streams, corn, rice fields... After having the ingredients, they prepare the dishes themselves according to traditional recipes combining wild herbs, wild chili... to create the unique flavor of the dishes.
The typical dishes of the K'Ho people at the foot of Lang Biang mountain are now not only family meals but have become a culinary culture for tourists to enjoy and experience. Thanks to the delicate and harmonious combination of spices available in the forest, along with clean, unique and mainly natural ingredients, the dishes in the culinary culture of the K'Ho people here have their own unique flavor, rich and leave a deep impression on diners. In recent years, Lac Duong district has annually organized the Lang Biang Cuisine and Wine Competition, thereby contributing to preserving and promoting the unique cultural values of the local ethnic group.
As the head chef of the Da Chais commune team participating in the Lang Biang Culinary and Wine Competition organized by the People's Committee of Lac Duong district in response to the 10th Da Lat Flower Festival - 2024, Ms. So Ket Tha Ri quickly prepared the typical dishes of her locality and introduced them to us: "Our team has a dish of red-tailed fish braised with pepper, this is a type of fish caught from streams, rare this season because of the high water level, people have to wait for the water to recede to set up nets. Along with that is a salad of fern picked from the forest, mostly making the most of natural ingredients. Because since ancient times, the food sources of the villagers have all come from nature, so our team wants to preserve the culinary culture that has been passed down for generations."
As for Mr. Ro Ong Miel - head chef of the Lat commune competition team, this is the first year he has participated in the competition. Although he is a man, Mr. Miel is very skilled in preparing dishes. He said: "Lat commune brings to the competition sticky rice cooked from newly harvested sticky rice and wild chestnuts that only bear fruit once every 7 years, so this sticky rice dish has a fragrant, sweet and sticky aroma. Along with that is the dish of bitter eggplant with buffalo skin, bitter eggplant picked from wild plants growing along the hillsides and dried buffalo skin, a traditional dish of the people since ancient times". When asked "Why do men know how to cook?", Mr. Miel smiled: "At home, I often cook with my wife. Now, cooking is not only for women, but men also need to share". His wife stood by to help her husband, smiling happily. This happiness is probably shared by many K'Ho women when the thinking of men in the village has changed...
Along with typical dishes, Can wine is indispensable in the culinary culture of the K'Ho people. Can wine is made from corn or field rice. The special thing is that the K'Ho people use forest leaves to ferment instead of using yeast bought from the market. They also do not cook or distill, so the wine has a bitter taste when first sipped, but when drunk, it will be sweet from the tip of the tongue and have a strong aroma. This is a typical Can wine of the K'Ho people in Lac Duong, passed down from generation to generation, and Lang Biang Can wine has been branded as a typical traditional product of the K'Ho people here.
Based on the cultural characteristics as well as the potential for community tourism development, in recent times, Lac Duong district has built a unique community cultural tourism route. Up to now, community cultural tourism here has become an unmissable destination for tourists who have the opportunity to come to Lac Duong, Da Lat - Lam Dong. Ms. Dao Thi Phuong Loan - a tourist from Hanoi said: "This is the first time I have come to Da Lat, I learned about the culinary competition of ethnic minorities in Lac Duong, so I came to learn and found it very interesting because of the dishes that people cook here, especially when I heard about many dishes with ingredients completely from nature, so I really like this clean food source. I hope these dishes will be popular in restaurants and eateries so that tourists can enjoy the typical flavors of Lang Biang mountains and forests".
“Through the Lang Biang Cuisine and Wine Competition, Lac Duong district wants to introduce and promote typical dishes with ingredients from the mountains and forests of the ethnic minorities here. That is also a cultural feature that needs to be preserved. Some dishes are available at restaurants in tourist areas in the area, gong exchange points so that visitors from all regions can enjoy and fully experience the flavors of Lang Biang mountains and forests such as buffalo meat, smoked pork, grilled meat, wine, bitter eggplant with buffalo skin... Besides many natural landscapes, we want to introduce the culinary culture of the indigenous people to promote the tourism potential of the locality, at the same time promote the image of the land, people and traditional cultural values of the ethnic groups in the district. In the coming years, the locality will continue to organize competitions, culinary festivals and Lang Biang wine in combination with other festivals to preserve and promote cultural values imbued with national identity", Mr. Cil Poh - Deputy Chairman of Lac Duong District People's Committee said.
The unique cultural features of ethnic groups in Lac Duong district have contributed significantly to attracting tourists to the locality. In 2024, there were more than 2.5 million visitors to Lac Duong with revenue reaching 330 billion VND. This is also a practical form for the locality to both diversify tourism products and contribute to preserving and promoting the traditional cultural values of ethnic minorities in general and the K'Ho people in particular.
