Scientists from the University of Waterloo (Canada) used data from studies simulating how the body reacts to high amounts of sodium or potassium.

The results found that when sodium intake was doubled, blood sodium levels increased only slightly, but blood pressure increased sharply, especially in men.

Research has long shown that excess sodium raises blood pressure while potassium helps lower it. But this new study goes deeper, showing that the ratio of potassium to sodium in the diet is what matters most. When this ratio is out of balance, as it is in the modern diet (which is high in processed foods high in salt and low in potassium-rich fruits and vegetables), blood pressure rises, as does the risk of heart disease and premature death. But increasing potassium—from foods like bananas and broccoli—even without cutting back on sodium can help control blood pressure better. Professor Anita Layton said: Our research shows that adding more potassium-rich foods – such as bananas or broccoli, to the diet – may have a more positive impact on blood pressure than simply cutting down on sodium.

Research by Imperial College London (UK), recently published in the medical journal Journal of Human Hypertension, found that eating just 1 extra gram of potassium - equivalent to 2 medium bananas, a cup of spinach or 1 sweet potato - each day can be enough to address high blood pressure.
