Walking on the village road of Duong Ngoc village in the late afternoon of the year, the aroma of malt, peanuts, sesame... spread everywhere. These days, workers of Truong Thuan Production and Trading Company Limited are bustling on the candy production line. This is the time when the peanut candy and sausage candy making profession enters the Tet season. Originally from Nguyen village, Nguyen Xa commune (Dong Hung), when living in Tan Tien commune (Hung Ha), Mr. Phan Van Truong boldly built a peanut candy and sausage candy production facility to develop the profession right in the locality. Initially, his workshop mainly produced by hand, however, due to the increasing demand of diners, in 2019, he decided to establish a company and invest in machinery to produce in larger quantities to meet the market demand. With the criteria of not using preservatives, producing to where, consuming to where, not leaving inventory, ensuring that products when released to the market are always fresh, retain the original flavor, crunchiness of peanuts, sesame..., the Company's products are trusted by many customers. On average, the Company produces 70 - 80 tons of candy per year for sale to the provinces.

To make delicious peanut candy and stuffed candy, the producer must be skillful and careful in each stage. Ms. Nguyen Thi Nga, An Nhan village, is one of the workers with more than 10 years of experience in making peanut candy and stuffed candy. She said: For peanut candy, first roast the peanuts until cooked, remove the shell, and pound them. Then, melt the maltose and mix the ingredients well, pour it out on a flat rolling pin and cut it into pieces according to a certain pattern. Next, use roasted sesame seeds to sprinkle on the surface of the candy and wait for the candy to dry and crisp before packaging. As for stuffed candy, the production process is more meticulous. First, the maltose and sugar are simmered on a stove until they form a block with a certain elasticity. The second step is to spread the ingredients very thinly to make the candy shell, then put the filling in the middle and roll it into a long cylinder. The requirement of this stage is that the maker must be very skillful so that the outside of the candy looks like a piece of stuffed candy with a white sugar shell and fragrant peanut filling inside. The final step is to cut into standard size pieces and then package the finished product with eye-catching, compact, convenient product packaging and design with a QR Code on the packaging to help consumers look up product information conveniently.
