Step 2: Cook the tapioca pearls with 1 liter of water for about 15 minutes. Stir constantly so that the tapioca pearls do not stick together. Once the tapioca pearls are cooked, pour them into a basket, rinse with cold water, and drain.

Step 3: Put the pot on the stove and boil 700ml of water, add 400ml of coconut milk and marinated ripe bananas.

Stir the bananas on the stove for 5 minutes, then add tapioca flour and 100g of rock sugar and cook together.

Cook for another 10 minutes until the bananas and tapioca are soft, well blended, and soaked in coconut milk, then turn off the heat.

Finally, scoop the pudding into a bowl, sprinkle some roasted peanuts and enjoy!

Steamed banana cake with coconut milk

Ingredient

Ripe banana: 1kg

Rice flour: 200g

Tapioca starch: 250g

Coconut milk: 250ml

Coconut water: 250ml. This is the second amount of water extracted after extracting the coconut milk.

Step 1: Peel the ripe bananas, cut into thin slices and marinate with 100g of sugar to enhance the banana flavor.

Step 2: After 15-20 minutes of marinating the bananas, add 200g of tapioca starch, 100g of rice flour and a little salt and mix well. Continue adding 250ml of coconut water, 2-3 tubes of vanilla and mix well.

Step 3: Brush cooking oil into the mold then pour in the banana cake mixture. Steam the banana cake for 10 minutes.

Step 4: Meanwhile, you will make the coconut cream to drizzle on top by mixing 250ml coconut cream, 100g rice flour, 50g tapioca starch and 50g sugar. Stir the mixture well.

Step 5: After steaming the banana cake for 10 minutes, drizzle the coconut cream on top of the cake and continue steaming for another 10 minutes.

The finished product is a soft and chewy cake with fragrant banana flavor and rich coconut milk that is extremely attractive.
