Since 2012, Gioi Phien Vermicelli Village has been recognized by the Provincial People's Committee as a rural craft village. Each year, the village supplies hundreds of tons of vermicelli to the market, generating tens of billions of dong in revenue, creating jobs for local people, and contributing to a steady increase in their income. Today, vermicelli making is no longer just a "side job during the off-season" but has become the main source of income for the local people.

Visiting Mr. Tang Ke Ton's family on a beautiful sunny day, we truly felt the hustle and bustle of the peak season. For Mr. Ton and the people here, to get delicious, chewy, and perfectly dry vermicelli, those in the profession always have to "watch the sky, watch the earth, watch the clouds." Mr. Tang said that the village only makes vermicelli when the weather is sunny and dry. Only when the vermicelli is dried under natural sunlight will the strands be translucent, chewy, and retain the characteristic aroma of arrowroot starch.

The vermicelli-making craft in Gioi Phien is a profession that relies heavily on the weather, the land, and the clouds. According to the villagers, they only make vermicelli when the weather is sunny and dry.

The biggest difference that helps consumers identify Gioi Phien vermicelli is its color, as Mr. Ton shared: "Many people wonder why the vermicelli here isn't pure white. That's because we make it from 100% pure arrowroot starch, absolutely no bleaching agents are used. That natural grayish-white color is the color of the vermicelli strands made from pure arrowroot starch."

To make delicious, chewy vermicelli noodles that remain firm and don't break apart or stick together even after multiple reheatings, the noodle maker must be extremely meticulous, from filtering the flour through several layers of clean water to the technique of "making the paste" (mixing the flour). The water must be boiling hot, and the stirring must be firm enough to ensure the flour cooks thoroughly without clumping, creating the perfect chewy texture.

Rising to prominence thanks to the "leverage" of OCOP (One Commune One Product)

While previously, products from Gioi Phien vermicelli village were only found in traditional markets, they are now confidently present in shopping malls and major supermarket chains.

In 2023, the vermicelli and mung bean vermicelli products of the Gioi Phien Giap Hau Vermicelli Cooperative received OCOP 3-star certification. This OCOP 3-star certification is not just a title, but has become a "calling card" bringing the vermicelli products of Gioi Phien Vermicelli Village to supermarkets and major shopping malls. From relying on seasonal income, Gioi Phien Vermicelli Village has now transformed from purely agricultural production to a sustainable agricultural economy .

Ms. Nguyen Thi Thuy Hau, Director of Gioi Phien Giap Hau Vermicelli Cooperative, said: “To prepare for the Lunar New Year of the Horse 2026, the Cooperative has proactively signed agreements for clean raw material sources and remains steadfast in its commitment to the "three no's" criteria: No bleaching agents - No preservatives - No impurities.”

Beyond just quality, Gioi Phien vermicelli today boasts a new, professional image. Each package incorporates a barcode; with just a scan on a phone, customers can trace the origin of each product. This is the key factor that has helped Gioi Phien vermicelli successfully break through barriers to be available on the shelves of major supermarket chains like VinMart and GO…
