Although delicious, are undercooked egg yolks safe to eat? And how cooked should an egg yolk be?
The following is advice from nutrition experts specializing in food safety.
The risks of eating raw fried eggs.
There are risks associated with eating raw fried eggs – specifically, Salmonella bacteria.
This type of bacteria can contaminate food or water and can cause a range of unpleasant side effects such as diarrhea, fever, chills, and in some cases, even more serious conditions. Salmonella bacteria are more common in raw or undercooked food than in cooked food.
Nutrition expert Amanda Holtzer, founder of Amanda Ghee Nutrition Center (USA), explains: According to the US Centers for Disease Control and Prevention (CDC), all animal-derived foods—such as eggs, poultry, beef, and fish—are at risk of Salmonella contamination. Eating any of these products raw or undercooked is unsafe.

Usually, the temperature when frying eggs is high enough to kill the Salmonella bacteria present in the eggs.

What constitutes a runny yolk on a fried egg?
A general rule for healthy adults is to fry for at least 2-3 minutes, explains expert Holtzer. When you shake the pan, the egg whites should no longer move and shouldn't be jelly-like. The yolks should also not move, or if you prefer a slightly runny yolk, they should only move slightly. Make sure the eggs are cooked through at a temperature between 62°C and 70°C.
Dr. James E. Rogers, a leading American food safety expert, stated that the temperature during egg frying is usually sufficient to kill Salmonella bacteria present in eggs, provided the egg whites have solidified, according to the health news website Eating Well.
In addition, there are a few other steps to make eating fried eggs safer.
Expert Holtzer advises: Proper egg storage can reduce the risk of infection. Store eggs in the refrigerator. Don't leave eggs outside the refrigerator for too long.
If you like your fried eggs slightly undercooked, it's best to use pasteurized eggs. This means the eggs have been sterilized before packaging, according to expert Holtzer. According to the U.S. Department of Agriculture , pasteurized eggs are eggs heated to a temperature high enough to kill Salmonella bacteria but not to cook them completely.
Cracked or broken eggs should be discarded. Finally, wash your hands before and after handling raw eggs.
Who should avoid eating undercooked fried eggs?
Despite the risks, most healthy people shouldn't worry too much about eating undercooked egg yolks. Nutritionist Kylene Bogden, co-founder of the FWDfuel Nutrition Center (USA), says: While there's a risk of poisoning, soft-boiled egg yolks are generally safe. However, pregnant women, children under 5, people over 65, and those with weakened immune systems should avoid undercooked egg yolks, according to Eating Well.
