These days, Co Chau's fresh sausage production facility (Can Duoc district) is bustling with activity. This is the busiest time of year. The owner of Co Chau's sausage production facility, Luu Thi Kim Chau, along with her team of skilled workers, are busy producing batches of delicious, flavorful sausages to serve the Tet (Lunar New Year) market.
For over 40 years, Co Chau fresh sausage has become a famous specialty of Can Duoc district. In 2021, Co Chau fresh sausage was recognized by the Provincial People's Committee as achieving OCOP 3-star standard. This brand was built on a combination of family recipes and dedication to the craft.
Ms. Kim Chau shared: "Every step, from selecting ingredients and marinating to drying the sausages, must be done meticulously. The meat used for sausages must be fresh, the spices must be rich and flavorful, and most importantly, no preservatives are used."
Ms. Kim Chau further shared: “To prepare for the Tet market, the facility has increased production to 600-800kg of sausages per day, 6-7 times more than usual (on average, the facility supplies 1-2 tons of products to the market each month). The facility's "famous" products such as traditional fresh sausages, salted egg sausages, shrimp sausages, and Taiwanese-style sausages are all popular with customers, not only because of their distinctive flavor but also because of their safety and strictly controlled quality. The distinctive flavor of Co Chau's fresh sausages comes from a traditional wine marinating recipe that preserves the delicious aroma and creates a natural binding. To suit today's consumer tastes, the product has reduced fat and spices.”
More than just a traditional dish, Co Chau's fresh sausage is also chosen as a gift that embodies the flavors of the homeland during the Lunar New Year, contributing to a more complete and joyful family gathering.
The Sen Hai Nhon Agricultural Service Cooperative (Tan Thanh district), with its OCOP products such as lotus powder and lotus heart tea, is also entering its peak season to meet the increased market demand during the Tet holiday.
Established in August 2022, the cooperative has built a reputation for its clean processing methods, using no additives and ensuring the preservation of the lotus's natural value. In particular, its two main products, lotus powder and lotus heart tea, have not only received OCOP certification but have also become a favorite choice for many families.
Ms. Ngo Thi My Dung, Director of Sen Hai Nhon Agricultural Service Cooperative, shared: “Tet (Lunar New Year) is a favorable time for me to introduce our products to more people. From lotus heart tea, which helps improve sleep and beautify the skin, to dried lotus seeds and lotus seed jam, all are meticulously and wholeheartedly processed. With three main lotus-based product lines – lotus heart tea, lotus powder, and lotus seeds – the entire processing chain uses only clean ingredients, ensuring the preservation of nutritional value and pure flavor, satisfying our customers.”
Not stopping at just two OCOP products, the cooperative also offers a diverse range of items such as lotus seed jam, dried lotus seeds, lotus seed tea, and fresh lotus roots. These are not only nutritious foods but also meaningful Tet gifts, imbued with the spirit of the traditional Tet holiday.
