After the selection process of 10 nominations announced by the Asian Record Organization, according to the criteria, the number of records for Vietnamese cuisine and specialty gifts achieving Asian records was increased to 60 dishes from 2012 to 2023 (including 38 specialty dishes, 22 natural specialties and specialty gifts from localities).
Hotpot contains the yin and yang philosophy of the person who prepares and enjoys it. Each dish is combined according to 5 natural elements: metal, wood, water, fire, earth, and uses spices such as spicy, salty, sweet, sour, bitter.
The 5 special dishes that have just set Asian records include: Saigon bread (HCMC); mussel rice (Thua Thien - Hue); Phan Thiet hotpot (Binh Thuan); Ninh Hoa grilled spring rolls (Khanh Hoa); and vermicelli soup ( Soc Trang ).
5 natural specialties and gift specialties include: Com Lang Vong (Hanoi); Sweet Potato (Quang Binh); Sesame Candy (Thua Thien - Hue); Da Lat Strawberry (Lam Dong); Tra Cuon Tet Cake ( Tra Vinh ).
Previously, with the nomination of VietKings: in 2012, 12 Vietnamese dishes were recognized by the Asian Record Organization including pho, bun thang (Hanoi), banh da cua (Hai Phong), bun bo (Hue), com tam (Saigon), goi cuon (Saigon), burnt rice (Ninh Binh), eel porridge (Nghe An), pho khot (Gia Lai), banh khot (Vung Tau), and mi Quang (Quang Nam).
A bowl of mussel rice is mixed from all the above ingredients, then poured in mussel water to enjoy.
In 2013, 10 Vietnamese dishes were recognized by the Asian Record Organization, including: La Vong fish cake (Hanoi), perch vermicelli (Hai Duong), Ha Long squid cake (Quang Ninh), Hoi An cao lau (Quang Nam), Quy Nhon fish cake noodle soup (Binh Dinh), leaf salad (Kon Tum), banh beo bi (Binh Duong), bun suong (Tra Vinh), My Tho noodles (Tien Giang), Chau Doc fish vermicelli (An Giang); 8 Vietnamese specialties were recognized by the Asian Record Organization, including: green bean cake (Hai Duong), tea (Thai Nguyen), Tra Bong cinnamon (Quang Ngai), Ngoc Linh ginseng (Kon Tum), Buon Me coffee (Dak Lak), Trang Bang dew-dried rice paper (Tay Ninh), coconut milk rice paper (Ben Tre), Phu Quoc pepper (Kien Giang).
In 2022, 7 types - groups of Vietnamese dishes were recognized by the Asian Record Organization including: sầu đâu salad (An Giang), Phú Quốc herring salad (Kiên Giang), U Minh fish sauce hotpot (Ca Mau), lotus dishes (Dong Thap), dishes from snakehead fish (Hâu Giang), dishes from ocean tuna (Phu Yen), dishes from coconut (Ben Tre); 4 Vietnamese specialties were recognized by the Asian Record Organization including: Lý Sơn garlic (Quảng Ngãi), Lò Ren Vĩnh Kim star apple (Tiên Giang), bird's nest (Khanh Hoa), and Phu Quoc sim wine (Kiên Giang).
From the baguette, bread has undergone many changes, both preserving the traditional features of French bread and imbued with the essence of Saigon - Ho Chi Minh City.
The Asian Record Certificate will be authorized by the Asian Record Organization to VietKings to present to localities at the 53rd Vietnam Record Holders Reunion, scheduled to take place on January 6, 2024 in Ho Chi Minh City, or localities will receive the record in events organized by the locality.
