Red meat
Red meat is high in saturated fat, which when consumed in excess, leads to fat accumulation in the liver. This condition is called non-alcoholic fatty liver disease (NAFLD), which can progress to non-alcoholic steatohepatitis (NASH), cirrhosis, and eventually liver failure.

Additionally, when red meat is cooked at high temperatures, such as grilling or frying, carcinogens such as HCAs and PAHs can form. These substances have been shown to damage the liver and may increase the risk of liver cancer.
Processed meat
Processed meats (sausages, bacon, ham, and other cold cuts) are often high in sodium, which can raise blood pressure and contribute to liver damage. Excess sodium may also increase the risk of non-alcoholic fatty liver disease (NAFLD).
Preservatives such as nitrates and nitrites are added to processed meats to extend their shelf life and prevent the growth of harmful bacteria. However, these substances can be converted into harmful compounds in the body, causing liver cell damage and increasing the risk of cancer.
Fresh bamboo shoots
Fresh bamboo shoots can be harmful to the liver if not prepared properly due to the significant amount of cyanide. When eaten fresh bamboo shoots, cyanide is converted into hydrocyanic acid (HCN) under the influence of digestive enzymes. HCN is extremely toxic, can inhibit cellular respiration and cause liver damage.
HCN can also directly damage liver cells, impair liver function and cause symptoms such as jaundice, fatigue, loss of appetite and abdominal pain. Long-term consumption of fresh bamboo shoots can increase the risk of liver diseases such as hepatitis, cirrhosis and even liver cancer.
Animal organs
Animal organs are a popular, common dish that many Vietnamese people love. However, it should be noted that they contain a significant amount of fat and cholesterol, which is not good for your health if consumed in excess.
Eating too many animal organs can reduce or inhibit bile secretion, making it difficult for the liver to purify fat and increasing the metabolic burden.
Limit your consumption of animal organs, especially if you have a history of heart disease, fatty liver or gout. If you choose to eat animal organs, eat them in moderation and prepare them by boiling or steaming to reduce the amount of fat. Choose animal organs from reputable sources, ensuring quality and food hygiene and safety.
