Is eating goose liver really good?

According to Associate Professor Dr. Nguyen Duy Thinh, former staff of the Institute of Biotechnology and Food, Hanoi University of Science and Technology, only the liver of geese raised according to a specialized process and raised in a region of France is valuable and expensive. Otherwise, normal goose liver is just like other types of poultry liver, and in Vietnam, goose liver is not used as much as chicken liver or duck liver because goose is not a popular food in culinary life.

Geese are raised in France for the sole purpose of harvesting their livers, using a special breeding process. In addition to choosing specialized foods, breeders also force-feed the geese with the sole purpose of making their livers as big and fat as possible.

In Vietnam, geese are still raised naturally, for the purpose of eggs and meat, not liver. Moreover, both goose meat and liver are not as delicious as chickens if raised under normal conditions like in Vietnam.

With a special farming process, after the livers of geese are harvested, the meat will be completely removed. The large and fatty livers are then processed into many dishes. Because the geese raised for their livers are specially cared for, a lot of fat accumulates in the liver, which is why French foie gras has a special aroma and is fatty. Because not all places can raise this type of liver, the price is expensive.

In terms of nutritional value, goose liver contains vitamins A, B6, B12, C and minerals such as iron, calcium, magnesium, sodium, and potassium, just like chicken liver. If you eat goose liver in moderation and choose a clean source, it will be good for your eyes and blood because it has a high amount of vitamin A and iron.

Experts acknowledge that the nutritional value of animal liver in general cannot be denied, but this is a detoxifying organ, so there will still be some unhealthy substances remaining in the liver, so you should not eat too much. Especially chicken and goose livers that are raised for increased weight and have a short raising time, the risk of accumulation is even higher.

In general, you should eat animal liver in moderation and choose liver from healthy animals and buy it from reputable sources.
