Muong Khuong's specialties are bustling during the Tet season.

In the final days of the year, the people of Muong Khuong commune are bustling with preparations of various specialties such as sausages, dried meat, chili sauce, and Seng Cu rice… to serve the Lunar New Year market. From here, these delicious specialties with their distinctive flavors have spread to all regions.

With only about two months left until the Lunar New Year of the Horse 2026, Mr. Dinh Hong Thanh, a resident of Muong Khuong commune, is once again buying delicious sausages and dried meat to send as gifts to relatives in other provinces, just like every year. He believes that these gifts from his hometown, though not expensive, will bring joy to his family and friends because of their distinctive flavors.

Mr. Thanh shared: "My hometown is in Phu Tho , but I moved to Muong Khuong to live and work for many years. Every year, during Tet (Lunar New Year), I usually buy sausages and dried meat for my family to use during the holiday and to send as gifts to relatives back home. Muong Khuong sausages and dried meat are made from black pork and have a unique flavor, so consumers really like them."

Like Mr. Thanh, Tet (Lunar New Year) is usually a time for families to gather and reunite around the dinner table, and also a time to enjoy and share delicious food. Therefore, the demand for specialty products usually increases.

Previously, the family of Ms. Phung Kim Dung in Xom Moi residential area only made sausages and dried meat for family consumption and to entertain guests during Tet (Lunar New Year). In recent years, recognizing that this specialty dish with the flavor of the Muong Khuong highlands is increasingly accepted by the market, Ms. Dung's family has started processing sausages and dried meat for sale.

According to Ms. Dung, the most important thing in creating specialty products that customers will remember is selecting local black pork as the main ingredient and marinating it with various characteristic spices, while ensuring food safety and hygiene. From October onwards, Ms. Dung's family's sausage and dried meat drying ovens are always burning brightly. A few fresh sugarcane stalks are always placed in the glowing charcoal oven so that the aroma of the sugarcane, mixed with the smoke, permeates each piece of dried meat and sausage, creating a distinctive flavor.

Besides selling to local people, Ms. Dung's family's sausages and dried meat products are also sold to many places, serving the consumption needs of people throughout the country. For the Lunar New Year of the Horse 2026, Ms. Dung's Dung Su business expects to sell about 2 tons of sausages and dried meat. Due to high orders, Ms. Dung has hired three additional workers and partnered with several other households, thereby creating jobs and increasing income for local people.

In the final months of the year, along with Ms. Dung's family, many other cooperatives and households in Muong Khuong commune are also busy preparing specialty products to sell on the market. One famous product that cannot be overlooked is Muong Khuong chili sauce.

Mr. Ha Duc Mam, representing a chili sauce production facility, stated: "Chili sauce is a traditional condiment of the people of Muong Khuong, made from a local chili variety that is more fragrant and spicier than those from other regions. My family has been producing chili sauce for many years, and we have now joined forces with several other households to establish the Muong Khuong High-Tech Agricultural Cooperative, specializing in large-scale chili sauce production for the market."

According to Mr. Mam, the best chili sauce requires over 3.5 months of fermentation, until all the yeast is gone and clear liquid rises to the surface. After fermentation, the chili sauce is bottled, labeled, and sold on the market. In 2024, Mr. Mam's family processed 18 tons of chili sauce for export, including markets in Southern Vietnam and abroad. This year, for Tet (Lunar New Year), his family produced about 10 to 11 tons of chili sauce.

Along with chili sauce, sausages, and dried meat, the specialties offered by Muong Khuong commune for this year's Tet market are quite diverse, including 5 products that have achieved OCOP 3-star certification: Muong Khuong Seng Cu rice, Muong Khuong tangerines, Dung Su sausages, spicy chili sauce, and colorful sticky rice from the Northwest region. For the Lunar New Year of the Horse 2026, Muong Khuong commune expects to export 1,000 liters of chili sauce, 2,000 kg of sausages, 3,200 kg of colorful sticky rice, and 50 tons of Seng Cu rice to the market.

Mr. Pham Duc Trung, Vice Chairman of the People's Committee of Muong Khuong commune, said: "Muong Khuong commune has many products to serve the Lunar New Year 2026, including branded products that are well-known in many places such as Seng Cu rice, dried meat, sausages, etc."

To ensure the quantity and quality of products reaching consumers, the commune government regularly directs households, businesses, and cooperatives to produce according to registered standards, ensuring food safety and hygiene. Muong Khuong commune also strengthens the promotion and advertising of local specialty products on social media, contributing to spreading the value of these products, expanding the market, and increasing income for the people.

As the Lunar New Year of the Horse 2026 approaches, a festive atmosphere is spreading throughout the villages and hamlets of Muong Khuong commune. People everywhere are busily making sausages, dried meat, five-colored sticky rice, and Seng Cu rice to meet market demand. For the ethnic people here, the greatest joy is bringing their local specialties to all parts of the country, adding rich flavor to every New Year's meal.
