Salted roasted cashews have long been a familiar snack for people in Binh Phuoc province in particular, and in many provinces and cities across the country, especially during holidays and Tet (Lunar New Year). Therefore, for those involved in cashew roasting, the Tet season is the busiest. Cashew products in general, and Binh Phuoc salted roasted cashews in particular, are now available in many supermarkets, chain stores, restaurants, and are also exported, so businesses and establishments in Binh Phuoc process them year-round.

Skilled cashew roasters rely on their experience to determine whether the cashews are roasted to perfection.

Currently, there are many different ways to roast cashews, such as using pans, electric roasters, and gas roasters. However, for connoisseurs, cashews roasted over wood fire are still the best, retaining their original flavor and unique aroma that cannot be achieved with gas or electric roasters. This is why many cashew processing and trading establishments in Binh Phuoc still maintain the traditional method of roasting cashews over wood fire.

“You have to control the fire very evenly and stir the cashews constantly; if the fire is too strong, the cashews will burn immediately,” shared Mr. Hoang Van Nam, a worker at Quang Vinh Import-Export Co., Ltd. in Phuoc Long town, who has 8 years of experience in the profession. To produce delicious roasted cashews, the raw cashews must be of high quality. The salt used for roasting is refined salt, usually Vietnamese or imported from Thailand. The salt used for roasting cashews can be reused 2-3 times. The firewood used for roasting is 100% dried cashew wood. During the roasting process, a strong and even fire is essential to ensure the cashews are cooked just right. Skilled workers rely on their experience to determine if the cashews are cooked. “Some people judge the ripeness of the cashews by touch, sight, smell, and taste. Personally, I can tell if the cashews are cooked by looking at the color of the shell and the smoke coming from the roasting pot,” Mr. Nam explained.

Mr. Do Huu Van from Binh Tan commune, Phu Rieng district, shared: "Cashew roasting is quite hard work. The workers have to stand next to the roasting oven constantly, sweating profusely from the heat. In the past, we had to roast in very heavy pans, but now there are rotary roasting ovens made of stainless steel, so the work is less strenuous. We take on contract cashew roasting, and during Tet (Lunar New Year), the workload increases, but the income is higher."

Cashews from Binh Phuoc, roasted using traditional methods over a wood fire, have a rich, nutty flavor with a strong salty taste and a distinctive aroma. This is a product loved by many consumers.

The new spring is approaching, and the Year of the Snake is just around the corner. Roasted salted cashews, a specialty of Binh Phuoc province, will make a meaningful gift for family and friends during this time.
