With the passion to preserve and promote the traditional cake making profession, Ms. Phan Thi Go in Tra Tay village, Tam My Dong commune (Nui Thanh) has successfully produced Nhung Tinh cake products according to new standards from rice and some natural ingredients in Tam My countryside.

Khao Khao cake is a type of cake that has existed for a long time in the Tam My countryside. However, the production of this type of cake has not been systematically implemented.

Based on consumer tastes, Ms. Go embarked on a project to produce Khao Khao cakes with new standards to improve product quality. The ingredients for making cakes from Tam My Dong land include Khang Dan rice, red sesame seeds, ginger..., bringing a unique flavor.

To produce standard Nhung Tinh cakes, Ms. Go's facility follows a very strict production process and ensures food hygiene and safety. After milling the rice, the steps are: kneading the rice, grinding the flour, soaking the water, sifting the flour, pouring it into the mold, and cutting the cake.

Next is the stage of steaming, drying, caramelizing sugar, seasoning with sesame, packaging to create the finished product. The product can be eaten immediately or stored in a sealed package in a cool, dry place, the product has a shelf life of 2 months from the date of manufacture. Nhung Tinh cake of Phan Thi Go business household has been recognized by the Provincial People's Committee as a 3-star OCOP product in 2023.

According to Ms. Go, with the mindset of bringing the best and highest quality products to consumers, Nhung Tinh cakes are made entirely from natural ingredients, without using preservatives, additives, or food coloring.

The finished cakes are carefully dried and packaged to always retain the crispiness of the rice, the fatty taste of sesame, the sweet and sticky taste of sugar, and the spicy aroma of ginger and lemon when enjoyed.

Nhung Tinh's Khao Khao cake products are very popular and sought after by customers. In 2024 alone, Ms. Go's facility sold more than 2,000 kg of cakes, with a revenue of 280 million VND, and after deducting expenses, she still had a profit of more than 80 million VND. In the near future, Ms. Go will expand the consumption market, because in reality, Khao Khao cake is a rustic product that is popular with consumers, especially during Tet...

Ms. Nguyen Thi My Hanh - President of the Women's Union of Tam My Dong commune said that the Khao Khao cake product diversifies the specialties from rice and sticky rice ingredients of Tam My countryside.

Having more high-quality OCOP products such as Khao Khao cakes in the locality is a source of pride for the local people. At the same time, the successful production of this product has contributed to creating jobs for women.
