Dumplings are certainly a dish that is no longer strange to everyone. Life is increasingly developing, dumplings are also being transformed more and more diversely. However, for many people, the true love is still the dumpling made in the traditional style with minced pork filling, vermicelli, shiitake mushrooms, wood ear mushrooms...
In Hanoi , it is not easy to find dumpling bakeries that still retain the traditional flavor and handmade method. The dumpling bakery nestled in Ton That Thiep alley is one of the places for those who love the old-fashioned style of dumplings.
The dumpling oven is nestled in Ton That Thiep alley, Hanoi.
Traditional dumpling oven with round and uneven dumplings but makes many people remember
Turn into Ton That Thiep street, turn into the alley of the same name, go a bit further and you will come across a dumpling oven with dumplings displayed right outside along with the characteristic aroma of this dish. There is no sign or beautiful shop, the dumplings are just out of the oven and people come to buy, people come in and out bustlingly from morning to evening.
The pure white dumplings were displayed outside.
It turns out that this dumpling factory is 25 years old. In the early days, a dumpling was sold for only 2,000 VND. At that time, the basic dumplings were only vegetarian dumplings, with quail egg filling, and then salted egg filling, not as diverse as today.

The dumpling seller here shared: "Now, following the social trend, I also have to keep up with the trend, but I still sell mainly quail egg dumplings and salted egg dumplings, which are also the dumplings that I started making from the first day of making them."
The buns here have a soft and spongy outer shell but are not dry at all. You can immediately feel the fragrant and chewy taste of the flour when you eat them. Talking about traditional buns, the filling includes minced meat with vermicelli, shiitake mushrooms, wood ear mushrooms and quail eggs. For salted egg buns, replace the quail eggs with half a salted egg, and add a piece of Chinese sausage. The filling is simple and rustic but the flavor is rich and delicious.
The dumplings are handmade so no two are alike.
The dumplings are handmade so they are not round, each one is different. The shape is not eye-catching but the quality is still delicious. And it is the uneven distortion that makes people more interested and nostalgic.
A piece of paper is placed underneath the bun. Different types of buns are marked with orange dots on the bun. If the batch is fresh from the oven, customers can eat it right away. But since this is a bun oven, customers mostly buy it to take home.
The crust is slightly shiny and the inside is soft and spongy.
Inside the dumpling is salted egg yolk filling.
The price of each cake is only a few thousand dong, the same for retail or wholesale customers.
Standing in this dumpling oven for a while, you will see people coming and going continuously. Some people buy a few, some buy dozens or even a few dozen, which is normal. There are customers who buy hundreds to resell. Most of the customers are regulars, they don't need to read the menu but quickly order: "Give me a dozen quail eggs, plus 5 salted eggs", "Give me 20 vegetarian buns" ... There is only one seller outside, but he quickly takes the buns and puts them in bags while calculating the money quickly. Inside the oven, the bakers also continuously bring out new buns to serve customers in time.
The signs were handwritten. The bakery was open from 5:30 a.m. to 7 p.m.
The prices of these dumplings are quite affordable.
Regarding the price of cakes here, traditional cakes with 2 quail eggs are sold for 8,000 VND, cakes with salted egg filling are priced at 9,000 VND, vegetarian buns are priced at 2,000 - 3,000 VND. In addition, the bun bakery also has other types of buns to serve customers, such as cheese char siu buns for 15,000 VND, quail egg and cheese sausage buns for 13,000 VND, and chicken and mushroom fried buns for 13,000 VND.
Because customers often buy in large quantities, people will prepare bags of 5 - 10 to sell quickly.
Talking about the affordable price, the seller confided: "My family only sells at this price, the customers who buy here are the wholesale price, whoever wants to buy as much as they want will sell at that price. My family mainly delivers to restaurants. Consider this as our wholesale price, whoever wants to buy retail, we will also sell."
Ms. Thu Hoai, 55 years old, a regular customer here, confided: "My house is 5-6km away, whenever I have something to do nearby, I always stop by to buy dumplings. Every time I buy, I have to buy dozens for my family. The dumplings here are delicious and reasonably priced. My family only eats the traditional type with quail eggs and salted eggs, occasionally buying the cheese type for my grandchildren. I have been buying dumplings here for almost ten years."
Many customers come and buy dozens for the whole family to eat.
On cold days in Hanoi, there is nothing better than stopping by a dumpling bakery and eating a hot bun right there. Don’t forget to buy a few more for the whole family to reheat and eat for breakfast the next day. A dumpling in the morning with a cup of soy milk is a warm feeling, right?
