However, many people are making mistakes in the way they prepare and use eggs due to habit.

This reduces the nutritional value of foods known as "healthiest foods", even harming the body and affecting health.

Eat raw eggs

Do not eat raw eggs or dissolve raw eggs in hot porridge or hot soup. Instead, boil or cook them to prevent infection...

The reason is that the chicken's genital tract has a lot of bacteria, so both inside and outside the egg can be infected, especially salmonella bacteria that cause food poisoning.

In addition, raw egg whites also contain a substance that prevents the body from absorbing biotin (vitamin H).

If you eat raw eggs, the body's absorption and digestion rate is only 40%. In boiled eggs, the absorption rate is 100%, fried eggs are 98.5%, fried eggs are 81%, fried eggs are 85%, and steamed eggs are 87.5%.

Therefore, you should eat hard-boiled eggs to ensure that nutrients such as protein, lipids, minerals, vitamins... are not lost.

Boiled eggs for too long

Boiling eggs is the best way to absorb many nutrients. However, eggs should only be boiled until cooked and not boiled for too long, as this can easily cause the protein to denature, affecting health.

The correct way to boil eggs is to put the eggs and water in a pot and gradually bring to a boil. When the water boils, turn down the heat and cook for about 2 minutes, then turn off the heat and let the eggs soak for about 5 minutes.

The ideal time for eggs to be fully cooked is 10-12 minutes. This way, the eggs are just cooked, the yolk is not overcooked, and is easy to absorb. When boiling eggs, you can add a little salt to keep the eggs from breaking.

Fried eggs

Fried or sunny side up eggs should be used on low heat and for a long time so that the yolk is just cooked.

High heat can easily cause the outside to burn while the inside remains uncooked. At that time, burnt egg whites will be difficult to absorb and will destroy water-soluble vitamins such as vitamin B1 and B2.

Frying at high temperatures also causes the vitamins in eggs to be lost. Only fry eggs over low heat and long enough for the yolk to be cooked.

Reheat eggs

Reheating cooked eggs not only causes the eggs to lose protein but also becomes toxic and causes digestive problems if reheated. You should especially not reheat boiled eggs and omelets.

Eat cooked eggs left overnight

Eggs are boiled but left overnight, the rich nutrients in the egg yolk can produce bacteria.

The reason is that when boiling eggs, the protein is damaged, and if left overnight, the nutritional value will be greatly reduced.

Eat eggs with soy milk

Many people have the habit of drinking soy milk and eating eggs in the morning to provide energy.

However, soy milk contains trypsin inhibitors, which can inhibit human activity and affect the digestion and absorption of protein in the human body.

If these two foods are combined, the protein in eggs can combine with trypsin in soy milk, hindering the protein breakdown process and reducing the body's protein absorption rate.

Soak boiled eggs in cold water

After boiling eggs, people often put them in a bowl of cold water to cool them quickly and make the shell easier to peel. This is completely wrong.

Drink tea right after eating eggs

Many people drink tea after eating rice and eggs to reduce bloating. In fact, the protein in eggs and tannic acid in tea leaves when combined together will cause indigestion due to reduced intestinal motility.

Eat eggs on an empty stomach

When the stomach is hungry, if you consume too many foods containing high protein content such as eggs, milk, meat, etc., the protein will be "oppressed" to be converted into heat energy and consumed, thereby not being able to exert its nutritional effect on the body.

Cook eggs with spices

When cooking eggs, many people often have the habit of adding soy sauce or MSG to increase the deliciousness.

However, this is a very harmful habit. Because when cooked with eggs, they will produce substances that destroy the available useful amino acids under high temperatures.

In addition, soy sauce can be cooked at high temperatures, but MSG should only be added to the dish after it is cooked and ready to turn off the stove. Therefore, if you want the egg dish to be more flavorful, just add a little salt.
