Bun sung is essentially vermicelli with crab soup, changed to a more appetizing taste, combined with mixed figs and fried crispy, fatty pork rinds. In addition, this vermicelli dish when eaten with pork rinds is also called vermicelli with pork rinds by Nam Dinh people.

According to Ms. Hien (owner of a vermicelli soup shop that has existed for more than 30 years in Dien Hong market, Nam Dinh city), in the past, to have side dishes with vermicelli soup for customers, she often sliced some figs into the bowl for customers. To suit each person's taste and preference, customers mix the figs with chili vinegar, sugar, seasoning powder, shrimp paste, etc. to eat with. Since then, every time eating vermicelli soup, customers often order more figs to eat with, so the dish is called vermicelli soup with figs.
A typical serving of Bun Sung includes noodles, crab broth, thinly sliced Sung, crispy fried pork rinds, and a plate of mixed raw vegetables. "In addition to the unique side dishes, the broth is also a decisive factor for a delicious bowl of vermicelli soup. That's why I prepare the broth according to the traditional crab soup recipe, then season it harmoniously to make the broth sweet and rich. My restaurant is open from 6am to 8pm, with about 500 bowls per day, and on peak days, up to a thousand bowls. To best serve customers, every day, my family members have to wake up at 3am to prepare ingredients and cook," Ms. Hien shared.
Knowing about the Dien Hong market's sung noodle shop through a friend's recommendation, Ms. Ngo Tuyen traveled from Thai Binh to come here to enjoy it. "The sliced sung is cleaned, crispy and not bitter when eaten with noodles, the crab soup is very tasty. On a scale of 10, I would give the shop 9 points, the minus point is because the shop is too crowded, if you want to enjoy it, you will have to wait," Ms. Tuyen said happily.
Although made from rustic ingredients with a simple preparation method, Bun Sung is still loved by many diners and chosen to enjoy on the culinary map of Nam Dinh.
