The familiar bun cha dish of Hanoians usually includes grilled pork and minced pork. If grilled pork is made from pork belly with lean and fatty parts, minced pork (vegetable meatballs) is made from ground pork. The minced meat is marinated according to each place's own recipe, then shaped into round balls. After that, the meatballs are grilled over charcoal, when finished, the meatballs are slightly charred on the outside, while the inside is still soft, moist, and slightly smoky.

"Old couple" 71 years old, one fanning the spring rolls, the other preparing food for customers, always cheerful
Visiting the "Old Man and Old Woman" bun cha restaurant, without even seeing the nameplate (it's called a nameplate but it's actually a tarpaulin with a few lines of basic information printed on it), you'll immediately see the two old people outside. Mr. Tao and Mrs. Nam, 71 years old this year, are still passionate about their bun cha restaurant.

Mr. Tao is associated with the image of grilled meat and the familiar seat right outside the restaurant. The meat and minced meat, after being neatly arranged on the grill, will be taken outside for Mr. Tao to grill. The meat grilling area is always hot and smoky, but Mr. Tao still works as usual. The grilled meat is just right, fragrant thanks to his long-time grilling technique.
Mr. Tao finished grilling the meat and then gave it to Mrs. Nam to prepare for the guests.
Mr. Tao and his familiar daily grilling corner.
As for Mrs. Nam, she is the one who creates the soul of the bun cha dish by directly marinating the meat and mixing the dipping sauce. Coming to the restaurant, you will see Mrs. Nam preparing food for customers. After Mr. Tao finishes grilling the meat, he will pass it to Mrs. Nam, everything has been going smoothly like that for the past several decades.
It turns out that Mr. Tao and Mrs. Nam have been selling bun cha for over 20 years, but before that, their family was also associated with bun cha. Their parents and grandparents all sold this dish. Mr. Tao and Mrs. Nam are the third generation.
Mrs. Nam will be the one to directly put the meatloaf into the bowl for the customers.
Talking about the minced meat rolls with coriander leaves, Mrs. Nam shared that her grandparents and parents have been doing it since then, so the family continues to do it. The coriander leaves that Mrs. Nam gets every day are large, so that the meat rolls are firmer. The job of rolling the meat is done by the family's son himself, each piece is evenly spaced.
His son was the one who did the rolling.
Ms. Minh Thu, a regular customer living near Yen Bai 2 alley, shared: "Every week my husband and I go to their restaurant to eat. My family has been eating here for about ten years. I find the vermicelli here to suit my taste. The best is the minced pork rolled with coriander leaves. I have never seen any restaurant make minced pork like this."
Located in the middle of a crowded residential area, bustling with business. Stopping by the "Old Man and Mrs" restaurant to eat a bowl of bun cha, observing daily life in a small alley on an autumn afternoon, might be interesting. And on a cool autumn day, simply eating a delicious bowl of bun cha is also fun.
