The Van Cu pho village in Dong Son commune (Nam Truc district) is considered the cradle of Nam Dinh pho in particular and Vietnamese pho in general. To develop the village's brand, the Van Cu Pho Association has developed a project titled "Development of Van Cu Pho Village in the period 2025-2035, with a vision to 2050". Accordingly, the project unanimously designates the 9th day of the 3rd lunar month each year as "Van Cu Pho Traditional Day". On this day, people from Van Cu village who are involved in the pho business from all over the country and abroad will return to their hometown to offer incense and pay respects to the ancestors of the profession, and set up pho stalls to serve the people and tourists from all over.
The project outlines solutions for preserving the traditional pho-making craft, emphasizing the strengthening of training programs and the transmission of traditional pho-making skills to the younger generation in the village. It also calls for organizing competitions and skill contests to encourage creativity and preserve the unique identity of Van Cu pho. Simultaneously, it aims to improve product quality, apply advanced technology in pho production and processing while maintaining the traditional flavor and cooking methods, and ensure food safety and hygiene standards to build consumer trust.
Furthermore, the project focuses on developing and expanding the brand, building a brand identity logo for "Pho Van Cu". It encourages and recruits more members to develop the branch organization. It also strengthens participation in food fairs and exhibitions, as well as organizing cultural and culinary events to promote the traditional pho product to customers both domestically and internationally.
The project also calls for investment to improve the transportation system and upgrade local pho processing facilities and restaurants to meet the needs of tourists and consumers. The integration of traditional craft development and village tourism is also emphasized. The project researches the development of a tourism model that focuses on experiencing the traditional pho-making process in Van Cu village, coordinating the organization of tours and food festivals to attract tourists and contribute to local economic development.
Regarding specific objectives, the Project is divided into two phases: Phase 1 (2025-2030) focuses on preserving and developing product quality, building brand recognition and basic infrastructure, and coordinating the organization of conferences to promote investment attraction for the craft village. Phase 2 (2030-2035) aims to expand the market for Van Cu pho brand internationally, promote tourism in the craft village, and improve the management and preservation system of local cultural heritage, contributing to promoting the image and culture of Van Cu pho village – the cradle of pho making – and enriching Vietnamese culinary culture.
