Chicken curry

This dish can be considered the Vietnamese version of Indian chicken curry. This dish is quite easy to prepare, using ingredients such as chicken pieces, potatoes, carrots, onions, garlic, coconut milk, chicken broth, and herbs and spices such as lemongrass, fish sauce, bay leaves, and curry powder.

To make the dish more flavorful, the meat should be marinated overnight. The curry is simmered until the potatoes are soft and all the other ingredients are fully cooked. Diners can enjoy this dish with rice and crusty bread (which is often used to soak up the curry sauce).
