How to make stir-fried Malabar spinach with eggs:

Step 1: Pick the young leaves and soft stems of Malabar spinach and wash them. Add a little salt and a spoonful of baking soda, pour water over the vegetables and soak for about 20 minutes. Next, rinse the vegetables under running water until clean, remove and drain. You can cut the Malabar spinach into bite-sized pieces or leave it whole.

Crack the eggs into a bowl and beat them thoroughly with chopsticks. Mince the ginger and garlic; finely chop the onions.

Make the sauce by adding 1 teaspoon of salt, 1 teaspoon of oyster sauce, a little pepper, light soy sauce, a teaspoon of cornstarch to a bowl and a little water, stirring well.

Step 2: Add a little cooking oil to heat the pan, pour in the eggs and stir-fry slowly over low heat until the eggs are soft. Fry the eggs until cooked, then break them into small pieces and set aside.

Add a little cooking oil to stir-fry the vegetables and mix well. Do not blanch the Malabar spinach because when stir-fried, the vegetables will not retain their freshness. Put the pan on the stove, add a little lard and stir-fry over high heat, then add garlic, ginger, chili, and green onions and stir-fry quickly until fragrant, then add the vegetables and stir-fry.

To make the Malabar spinach crispy, do not stir-fry for too long and stir-fry over high heat. After about 2 minutes, add the eggs and stir-fry quickly a few times, then add the previously prepared sauce and stir-fry quickly for a few more minutes.

How to cook Malabar spinach soup with clams

Step 1: Soak the clams in rice water, add a little sliced ​​chili and soak for about 2 hours to release all the mud. Then, take the clams out, rinse them a few times with clean water and put them in a pot to boil. Take the clams out into a separate bowl, and drain the clam broth. Next, peel off all the clam intestines and shells.

Pick the young parts of Malabar spinach, wash with diluted salt water, drain.

Step 2: Cook clam and malabar spinach soup:

Finely chop the shallots, saute with a little cooking oil, then add the prepared clams, seasoning and ground pepper to make it more flavorful. Add a little water to the pot of clam water and bring to a boil. When it boils, add the Malabar spinach. Next, add the stir-fried clam meat, stir well and season to taste. Cook for about 2 minutes, until the vegetables are dark green and soft, then turn off the heat.
