About the village in Hanoi that produces over 1 million banh chung for Tet

Kinhtedothi - Tranh Khuc craft village in Duyen Ha commune (Thanh Tri district) has been famous for a hundred years for its traditional Chung cake making. The work lasts all year round, but is busiest in the 10 days before Tet.

Coming to Tranh Khuc village at the end of the year, you will clearly feel the busy working atmosphere of the households. This is the busiest time of the year for the village.

Ms. Dang Thi Thao, owner of Diem Thao Chung cake production facility (Duyen Ha commune) said that her family has made Chung cakes for many generations. To prepare for the Tet Chung cake season, she had to order dong leaves more than a month in advance.

The profession of making Chung cake for Tet in Tranh Khuc village has existed for a long time.

With her hands wrapping the cakes quickly, Mrs. Thao said, she has been proficient with dong leaves, rice and beans for more than 45 years. Perhaps that is why it only takes her about 20 seconds to wrap a cake. "During the peak season for Tet, we distribute to the market about 1,000 banh chung each day..." - Mrs. Thao added.

The Banh Chung season in Tranh Khuc village usually starts from the 20th to the 29th or 30th of the 12th lunar month. After Tet, around the 3rd to the 15th of the 1st lunar month, people resume production to serve the festival. However, the largest consumption of products is still during the Lunar New Year.

Meanwhile, Ms. Nguyen Thi Thu, one of the households that has been involved in making banh chung in Tranh Khuc village for the longest time, shared that these days, the whole village is bustling like a "construction site", with some washing dong leaves, others washing rice, others wrapping...

“Although busy, everyone is happy. It is expected that during the Lunar New Year 2025, my family will supply the market with about 10,000 banh chung…” - Ms. Thu added.

Main ingredients to make famous Tranh Khuc Chung cakes.

According to Vice Chairman of Duyen Ha Commune People's Committee Nguyen Van Mao, this year's Tet banh chung season starts from December 10 to 29 (this year there is no December 30 - PV).

On average, each household packs from 10,000 to 15,000 banh chung, so it is estimated that the output supplied to the market can reach more than 1 million pieces. Of which, about 70% serves customers in Hanoi ; 30% is sold to provinces, cities and for export.

To improve the productivity and quality of banh chung, in recent years, people in Tranh Khuc village have used less dry firewood to cook the cakes. Instead, households have invested in electric pots, boilers...

Regardless of the fuel, according to the “professional” households in Tranh Khuc village, the cooking time must still be guaranteed to be from 10 to 12 hours. Only then will the rice grains be soft, sticky, and well-blended with the artificial flavor, creating a delicious, rich, and fatty flavor…

With its confirmed quality, Tranh Khuc Chung Cake is known to consumers in the capital as well as at home and abroad. The Duyen Ha Commune government also encourages households producing the product to participate in the One Commune One Product (OCOP) program.

Up to now, in Duyen Ha commune, there have been 3 banh chung production establishments whose products have been recognized by the Hanoi People's Committee as OCOP, of which one household has cakes that have achieved 4-star OCOP. This once again affirms the quality of Tranh Khuc banh chung, famous in Hanoi.

 

Tranh Khuc Village was recognized as a traditional craft village by the Hanoi People's Committee in 2011. Tranh Khuc Chung Cake has been registered as a collective trademark and provided with its own barcode system. The Duyen Ha Commune Government (Thanh Tri District) supports people in building a website to promote, introduce products and sell online.
