Weasels eat the berries that contain the coffee beans, and they have a natural tendency to select only the ripest, most delicious ones. The berries are digested, but the intact seeds are excreted and processed to give them a new, richer flavor. After drying and cleaning, the beans are then roasted to create the world’s best coffee, and the most expensive: 100 grams costs around a hundred dollars, but at the farms, visitors can try a cup for just a few dollars.

Fried crickets are a popular snack to enjoy with a few beers in Vietnam. At cricket farms in Da Lat, thousands of skinny little crickets are kept in egg cartons.

Once fried, the crickets are really fragrant, surprisingly meaty, and if you can get past the grossness of what you're eating, they're quite tasty.

You might be skeptical, but the world’s most beautiful natural fiber comes from silkworm pupae. But witnessing the ancient process of extracting silk from mulberry silkworms in the highlands of Vietnam is a fascinating experience. Silky white silkworm cocoons are boiled in large vats to kill the larvae inside. Women catch the white threads that fly out of the cocoons and attach them to a rotating shaft on a machine that unravels the delicate threads…

They are carefully wound on reels and finally woven on looms into beautiful fabrics. The boiled pupae are then removed from their cocoons and fried, making them a popular dish. The outside is crispy while the inside is chewy with a mild flavor but if you are not used to it you may not want to try it.

Vietnamese people often cause controversy when eating meats that are strange to foreigners, such as dog meat, rotten eggs, turtles or rats. So it is no surprise that porcupines, despite their unappealing appearance, are high on the list of favorite dishes.

When the quills are removed, they look less attractive, the skin is rough and gritty but the meat is sweet and fragrant. Farmed porcupines are expensive and not easy to buy.

Gate to Suoi Tien

Who said thrill-seeking and religion don’t go together? At Suoi Tien Amusement Park in Ho Chi Minh City, visitors can pray to a sacred Buddha statue before jumping on a Ferris wheel that resembles the multicolored electric halo often seen behind Buddha statues, or plunge down a water slide and emerge through the beard of a giant sage sculpture.

Statues of sacred Vietnamese Buddhist creatures - dragons, turtles and phoenixes - are displayed throughout the grounds, and staff dressed as golden monkeys run around. At the crocodile farm, you can even buy a live baby crocodile to feed...
