According to Master-Doctor Nguyen Phuong Anh, Deputy Head of the Nutrition Department, An Binh Hospital, vegetable candy can be considered a snack that contains some nutrients from vegetables, but cannot replace vegetables in the daily diet.
Dr. Phuong Anh analyzed that vegetable candy is usually made from dried vegetable powder. Depending on the drying method and the type of vegetable, every 5 grams - 20 grams of fresh vegetables will produce 1 gram of dried powder. Assuming that 1 vegetable candy contains 1 gram of powder, then each day you have to eat at least 16 candy pieces to be equivalent to the amount of vegetables an adult needs to consume (about 320 grams).
"Although vegetable candy can provide some nutrients from vegetables, it cannot completely replace fresh vegetables," Dr. Phuong Anh affirmed.

Fresh vegetables have a high water content, which helps create a feeling of fullness and helps control food intake. The fiber in fresh vegetables helps regulate the absorption of other nutrients in the meal, especially sugar and fat. When using vegetable candy, this effect may be lost or significantly reduced.
The process of drying vegetables, regardless of the technology used, will lose some nutrients, especially heat-sensitive vitamins such as vitamin C and some antioxidants. Freeze-drying technology can retain more nutrients but cannot completely preserve the nutritional content like fresh vegetables.

In addition, there are two types of fiber in vegetables: soluble and insoluble. During processing, the fiber structure can be altered, reducing its effectiveness in supporting digestion, controlling blood sugar, or creating a feeling of fullness.
Processing, Some vegetable candies contain added sugar or sweeteners to enhance their taste. Consuming a lot of candies can increase the amount of simple sugars in the diet, which is not good for health, especially for people who need to control their weight and blood sugar.
For people who are lazy to eat vegetables, doctors recommend practicing eating vegetables that are easy to eat and delicious to prepare, then gradually increasing the amount of vegetables in the diet.
