Banh duc has long been a rustic dish of the Northern countryside. When talking about banh duc, many people often think of cold, condensed banh duc, sprinkled with a few peanuts on top, dipped in shrimp paste or soy sauce, delicious enough to make you forget your way home. However, hot banh duc with sweet and sour fish sauce served with stir-fried minced meat, coriander, quail eggs, fried shallots, etc. is equally delicious, making diners fall in love forever.

Previously, Ms. Dang Thi Theu in Nguyen Trai ward ( Hai Duong city) opened a snack shop to serve customers. Ms. Theu said that one of the dishes that many people who come to her shop really like is banh duc with meat filling. Now, although the shop is no longer open, customers still occasionally order Ms. Theu to cook banh duc chan because they miss the sweet, fatty flavor of this rustic dish.

Coming to Ms. Nguyen Thi Hong's snack shop on Mac Thi Buoi Street (Hai Duong City), many customers order Banh Duc Chan. Ms. Hong said that on average, she can sell about 80 bowls a day. On cold days, the number of sales can be higher. Customers who come to her shop to eat Banh Duc Chan or order it to be delivered to their homes include all ages, because this dish is quite easy to eat.

Originally, Banh Duc is loved by many people because it is a traditional dish, with a familiar taste of the homeland. Therefore, when adding suitable spices and changing the cooking method, the dish becomes more attractive.

To cook banh duc chan is not too complicated, just prepare very familiar ingredients, available at most markets today such as: rice flour, corn flour, tapioca starch (or cassava flour), lean shoulder meat, quail eggs, coriander, wood ear mushrooms and spices that are almost available in every family's kitchen.

Ms. Theu said that to cook delicious banh duc, the above flours need to be divided into a certain ratio, in which the most is rice flour and soaked for at least 2 hours or more. If possible, soak overnight, the flour will expand evenly, when cooked the cake will be softer and tastier. To make banh duc richer and tastier, use bone broth to cook the flour. When cooking banh duc, the most difficult part is stirring the flour, need to stir evenly, continuously, do not let the flour clump. If not done carefully, the flour can easily burn at the bottom of the pot and not cook evenly.

Next, prepare the filling to go with the rice cake. Use minced or ground crispy shoulder meat. Soak the wood ear mushrooms in hot water for a while until soft, then wash and chop them. Put the pan on the stove, add a little onion and saute until fragrant, then add the minced meat and wood ear mushrooms. To make the filling more flavorful, add a little fish sauce, MSG, pepper, seasoning powder, etc. Then prepare boiled quail eggs, peeled, fried onions, and chopped coriander.

Whether a bowl of banh duc is delicious or not depends a lot on the flavor of the dipping sauce. Mixing the dipping sauce is not difficult, just need a little skill to balance the spices to make a standard bowl of banh duc dipping sauce.
