According to the shrimp cracker makers here, their daily work starts quite early, from 4am, preparing the shrimp, beating the dough, spreading the crackers, drying them, cutting the crackers, and putting them on the drying racks to catch the early morning sun. If the weather is sunny, the crackers need to be dried in the sun for 2 days to meet the requirements. Currently, to diversify the cracker products, people have researched and created many types of savory crackers, such as: shrimp, crab, oyster, crab crackers and sweet crackers made from vegetables, tubers, sesame, fruits (jackfruit, banana, dragon fruit, etc.).

The process of making rice paper is very important, it requires moderate thickness and even hand.

The freshly steamed rice paper is carefully placed on a bamboo pole to drain.

After drying on bamboo poles, the rice paper is cut into bite-sized pieces and dried in natural sunlight.

Mr. Huynh Trung Kien, owner of Kien Cuong Nam Can shrimp cracker production facility, Hamlet 2, Hang Vinh Commune, Nam Can District, said: "After nearly 4 years of making shrimp cracker products, the facility has always put quality and safety as the top priority. Since then, the amount of shrimp cracker products sold to the market has tended to increase. The facility produces all year round, with an average annual output of 70-100 tons, of which 70% are sold to the Northern provinces; the rest are to customers in the Central and Southern regions, with an annual revenue of nearly 7 billion VND."

Mr. Huynh Trung Kien, owner of Kien Cuong Nam Can shrimp cracker production facility, Hamlet 2, Hang Vinh commune, Nam Can district, is excited to have quite a successful start-up with shrimp cracker.

Mr. Pham Trung Kien, a civil servant of the construction land of Hang Vinh commune, said: Currently, the commune has 18 establishments producing shrimp crackers and many households work on a seasonal basis. Currently, the commune has 2 products that meet the 3-star OCOP standard, and in the near future, 1 product will be upgraded to 4 stars. This profession has opened up good prospects for individuals and businesses, contributing to creating significant jobs for idle workers in the locality, with an average income of 4-8 million VND/month. The annual output of shrimp crackers sold to the market ranges from 200-400 tons.

With only about 3 months left until Lunar New Year, the vitality of the Hang Vinh shrimp cracker village is more bustling.
