Ingredients to prepare
Cleaned duck: 1.4kg
Fresh coconut: 1 fruit
Taro: 500g
Star fruit: 10-12 fruits
Shallots, green onions, coriander, Vietnamese coriander, garlic, lemongrass, ginger, lemon, shiitake mushrooms
Seasoning: Fish sauce, pepper, seasoning powder, oyster sauce, sesame oil, sugar

How to make delicious braised duck with star fruit and coconut water
Step 1: Prepare ingredients
Clean the duck, remove the odor with wine, ginger, salt, then wash and drain. Next, chop the duck into bite-sized pieces, avoid chopping too small or crumbly because the meat will shrink after braising, become tough and not tasty.
After cutting, marinate the duck meat with a little fish sauce, pepper, seasoning powder (optional), oyster sauce (small amount), sesame oil (2-3 drops) and a little chopped onion, garlic, lemongrass.
Marinate the meat for about 30-60 minutes to let the meat absorb the spices.
Soak the mushrooms in warm water for about 10-15 minutes, then wash and cut off the stems.

Step 2: Stir-fry and braise the duck
Crush lemongrass, cut into long pieces and saute with minced onion and garlic, then add duck meat and stir-fry until cooked.
Add coconut water, shiitake mushrooms and star fruit and boil together, simmer for about 30-40 minutes, then add taro and continue cooking for 10-15 minutes. The taro should only be cooked until just done, and when the star fruit is cooked, mash it so the sourness permeates the broth.
Season to taste and add some chopped coriander, green onions, and Vietnamese coriander to make the dish more fragrant and colorful.

To make delicious braised duck with star fruit and coconut water, you need to choose a good quality duck with moderate weight.
You should buy fresh, small coconuts in the supermarket because this type of coconut has little water but is fragrant and has a rich sweet taste. It will taste better when cooked than coconuts sold on the sidewalk or roadside.
To braise duck, choose young plums (not too young, not too old) to have a mild sour taste and aroma.
Duck skin is often fatty, if the duck is too fat, you should fry or grill it to remove some of the oil before marinating.
