1. Ingredients for cooking beef offal

Beef offal of all kinds: 500g (including spleen, honeycomb, intestines...)
Coconut milk: 200ml
Coconut water: 1 liter
White wine: 2 tablespoons
Vinegar: Half a bowl
Garlic: 3 bulbs
Purple onion: 6 bulbs
Ginger: 1 root
Chili: 2
Fish sauce: 1 tablespoon
Cooking oil: 1 tablespoon
Lime juice: Half a tablespoon
Cinnamon: 1 piece
Star anise: 2 pieces
Five spice powder: 1 teaspoon
Curry powder: 1 teaspoon
Seasoning: salt, sugar, seasoning powder, MSG, pepper

2. How to cook beef offal

Step 1: Prepare ingredients

Peel, wash and chop garlic and shallots. Scrape and crush ginger. Wash and chop chili. Wash and roast cinnamon and star anise until fragrant.

Put the beef offal in a bowl with half a bowl of vinegar and half a cup of wine, stir well. Then, pour everything in and rub thoroughly inside and out to remove the slime and odor. Then, rinse again and drain.

Next, put the pot of water on the stove, add 1 teaspoon of salt and 1 crushed ginger and bring to a boil. Wait for the water to boil for about 2 minutes, add all the beef organs and boil for about 2-3 minutes, remove and wash thoroughly, drain. Finally, cut everything into palm-sized pieces.

Step 2 : Marinate beef organs

Put the beef offal in a large bowl, add spices such as curry powder, five-spice powder, salt, sugar, seasoning powder, MSG, pepper, fish sauce, a little minced onion and minced garlic, mix well and marinate for about 30-60 minutes to absorb the spices.

Step 3 : Stir-fry

Place the pan on the stove and pour in cooking oil. When the oil is hot, add the remaining minced garlic and shallots, add star anise and cinnamon and sauté until fragrant. Next, add the beef offal and stir-fry until firm for about 4-5 minutes. While stir-frying, turn both sides evenly so that the offal is cooked evenly.

Step 4: Cook the offal

Put the beef organs in a pot, add 1 liter of fresh coconut water and boil over high heat. Season the pot with 1 tablespoon of seasoning powder, 1 teaspoon of salt, a few pieces of crushed ginger, star anise, and cinnamon.

When the water boils, reduce the heat to medium and simmer for 45-60 minutes. Then, add 200ml of coconut milk and season to suit your family. Boil until the water boils again, then turn off the heat immediately.

Step 5 : Make the dipping sauce

Add 250g sugar, 100ml water, 15g salt to the pot, boil and stir until the sugar dissolves. When the sugar is completely dissolved, add the kumquat juice and boil again, turn off the heat, let cool. Add chili to taste.

Step 6 : Complete

Scoop the beef offal into a bowl, pour the sauce over it and enjoy. Beef offal is delicious with sweet and sour kumquat sauce and bread.

3. Notes when cooking beef stew

To cook delicious beef stew, choosing the ingredients is very important. When buying ingredients, do not choose organs that are bruised, black or pale green. If there is a foul smell or when pressed, there is no elasticity and is slimy, it is a sign that the ingredients are not fresh and not safe to use.

Choose beef spleen that is long and flat, with rounded ends. The spleen should be dark red or slightly green in color. It should feel slightly spongy to the touch. Avoid spleens that are mushy or have black bruises.

Large pieces of organs should be cleaned, especially the beef spleen which has many layers. If not cleaned, when boiled, many layers of black scum will float on the surface, making it unsightly.

Beef stew should be cooked lightly, not salty because the beef offal will be dipped in salt and chili. The broth is eaten with bread or instant noodles. If you like it sweeter, add rock sugar, it will taste sweeter than granulated sugar.

To make the broth fragrant and rich in herbal flavor, you can grind star anise and cinnamon sticks, then put them in a cloth bag (the kind used for cooking) and put them in the pot to roast so that when you take it out, it will be easier and there won't be any crumbs left.

The finished dish will have a dark brown color like cockroach wings, shimmering and beautiful, the beef offal is rich, naturally sweet, a bit spicy, salty and has a characteristic aroma.
